Preheat oven to 425 degrees. Trim and peel carrots. Cut widthwise into 3-inch pieces; cut lengthwise into ½-inch-thick fries. In a large bowl, combine carrots, umami stock concentrate, maple syrup, paprika and orange spice blend, 1 tablespoon cooking oil, salt, and pepper. Spread out on a lightly oiled baking sheet.
