A good chili has well-seasoned beef, creamy beans, and tender vegetables. A great chili, however, has all that and comes together in one pot in under an hour. This chili is one of the greats. And once you take a bite, we can guarantee you’ll agree. Not to mention, these beefy bowls are adorned with some delicious fixings: tangy hot sauce crema and melty Monterey Jack. If you’ve got some on hand, why not crumble up some tortilla chips and sprinkle them on top for a crunch?

Cooking Steps

Prep
1

Wash and dry all produce. Halve, peel, and dice onion. Thinly slice half the jalapeño into rounds; mince remaining half. TIP: Remove ribs and seeds for less heat.

Cook Onion and Jalapeno
2

Heat a large drizzle of oil in a medium pot over medium-high heat. Add onion and minced jalapeño; season with salt and pepper. Cook, stirring, until softened, 5-7 minutes.

Cook Beef
3

Add beef, Mexican Spice, Southwest Spice, salt, and pepper to same pot. Cook, breaking up meat into pieces, until browned and cooked through, 5-7 minutes.

Cook Chili
4

Stir tomato paste into pot. Cook, stirring, until dark red and combined, 1-2 minutes. Add diced tomatoes, beans and their liquid, stock concentrate, ¼ cup water, salt, and pepper; stir to combine. Bring to a simmer and cook, uncovered, until thickened, 8-10 minutes. Turn off heat. Taste and season with salt and pepper.

Make Crema
5

Meanwhile, in a small bowl, combine sour cream and hot sauce to taste; season with salt and pepper. Stir in water 1 tsp at a time until mixture reaches a drizzling consistency.

Serve
6

Divide chili between bowls. Top with Monterey Jack, crema, and as much sliced jalapeño as you like.

A good, hearty chili, but we think it would be better if the black beans were rinsed. That has usually been the instruction on most recipes. I even double checked. Undrained, the taste was a bit "muddy."

One of my favorite meals so far! A very balanced chili with a tasty crema sauce. Not too spicy. I did not add salt in many of the later steps when recommended because these recipes tend to over-recommend salt.

Delish. I pulled black beans, ground beef, and spices from my cupboard to double the recipe so I would have leftovers. Leftover chili is so much better and it's nice to have 2x the meals for one prep night.

Good flavor! I put this over spaghetti squash to get more servings. I used nonfat Greek yogurt instead of the sour cream to make the hot sauce crema. I wish there was an option to sub ground turkey for the ground beef when ordering for a healthier alternative.

I really liked this recipe. I have my own chili recipe, but it's nice to try something that has different seasoning than I typically use. The spicy crema and fresh jalapenos added something special to this dish.

I loved it! I loved the ingredients--especially the black beans, and the chili powder! It was the absolute best chili I ever had!

This is one of my favorite Hello Fresh meals. No need to spend a lot of time prepping and simmering a big pot of chili. This chili is fantastic because you can pull it together quickly and still get that delicious home-made flavor. It is well seasoned and you control the amount of spice. If you are anything like me and the hubs, you'll love the fresh bite of jalapenos along with the cool crema and stringy cheese. I usually add more meat to make ours even heartier during the winter months. It really tastes like you've been sweating over a hot stove all day-you get all the benefits with minimal work. There's a moderate amount of prep time, but it's well worth it. You end up with a deliciously filling bowl of chili. Yummy! We have also omitted the meat for those veggie days. It's still very tasty. Love.

Super easy recipe, flavorful I added a bit more hot sauce and chili powder as I like spicy spicy chili but it was very good.

I am very critical of chili. Beans vs. no beans aside.... this was a good bowl of chili. This recipe has a good blend of seasoning and just the right amount of heat.

I've never had chili like this before and i was not disappointed. Lots of flavor and the spicy crema kicked it up a notch.
