Cooking Steps

Prep
1
  • Wash and dry produce.

  • Halve, peel, and finely dice shallot. Roughly chop cilantro.

Cook Chicken
2
  • Open package of chicken* and drain off any excess liquid.

  • Heat a large drizzle of oil in a large pan over medium-high heat. Add chicken; season with Fry Seasoning, salt, and pepper. Cook, stirring occasionally, until browned and cooked through, 4-6 minutes.

  • Turn off heat; transfer to a plate. Wipe out pan.

Make Quesadillas
3
  • Place tortillas on a clean work surface. Sprinkle half of each tortilla with one-quarter of the mozzarella. Top with chicken, shallot, BBQ sauce, and half the cilantro. Sprinkle with remaining mozzarella. Fold tortillas in half to create quesadillas.

  • Heat ½ TBSP butter and a drizzle of oil in pan used for chicken over medium heat. Add quesadillas and cook until golden brown on one side, 1-2 minutes.

  • Add another ½ TBSP butter and flip; cook until golden brown and cheese melts, 1-2 minutes more. TIP: Depending on the size of your pan, you may need to work in batches, adding more oil and butter for each batch.

  • Transfer to a paper-towel-lined plate.

Finish & Serve
4
  • Cut quesadillas into wedges.

  • Divide quesadillas between plates. Drizzle with red pepper crema and garnish with remaining cilantro. Serve.

Review summary

Updated on Sep 2026
  • Flavor: The BBQ-and-crema combo is a fun twist on a classic quesadilla, though some found the BBQ sauce too sweet; a smokier or tangier sauce works better for those who prefer less sweetness 🌶️. The fry seasoning clashed with the BBQ flavor for a few cooks — salt and pepper alone, or a BBQ dry rub, may be a better pairing.
  • Ease of prep: Quick and easy to pull together on a busy weeknight, with minimal cleanup. Baking the quesadillas at 375°F for about 9 minutes is a great alternative to pan-flipping if you find them hard to turn without spilling.
  • Suggestions: Sauté the shallot with the chicken rather than adding it raw — several reviewers found the raw shallot overpowering, and cooking it first mellows the flavor nicely. Add bell pepper, jalapeños, or tomatoes to the filling for more color and veggie variety.
  • Portions: Most felt this dish works better as a lunch or light dinner; pairing it with a side salad, rice, or beans rounds it out into a full meal. Double the red pepper crema — one packet wasn't enough for two quesadillas.
  • Leftovers: Quesadillas held up well the next day for a few reviewers, making a great quick lunch. Reheat in a dry pan to keep the tortilla crispy rather than soggy.

Overall good! The idea scared us a little bit but when trying it was pleasantly surprised. Perhaps instead of the onion as a raw topping, cook it with the chicken? The textures were a little off and the fry seasoning was too much in comparison to the amount of chicken provided. Also the red pepper crema was just sour cream with paprika which was fine but a good spice could have added a lot.

WOW this was amazing! Maybe one of my favorite HelloFresh meals to date! Hard to believe I haven't tried HelloFresh quesadillas before (mainly because I make my own fairly awesome), but I'm glad I finally tried these because they were sooo good! Loved the BBQ flavor.

I sauteed the shallots with the chicken and then mixed in the bbq sauce so it was all coated before I made the quesadillas. These were a hit with my entire family.

I am not a BBQ sauce fan, but I love quesadillas. There was just enough sauce on this to the the quesadilla up a notch. YUMMY!

So delicious! Just wish there was more crema included or some type of sauce for dipping and more cheese. As it wasn't as cheesy as I like a quesadilla to be and it needs something to dip it in.

It was better to cook the shallot with the chicken and add the BBQ sauce before putting on the tortillas. Less mess!

Delicious. Suggest replacing the fry seasoning with the smoky bbq seasoning

Oh I loved these. Making quesadillas are one of my staples but the added scallion and the chicken seasoning was perfect

Came with a little too much filling, difficult to keep the quesadilla whole while cooking. Needed to cook for a bit longer than recipe stated.
