• Wash and dry produce. • Thinly slice zucchini. Cut bell pepper into strips. • Rinse shrimp* under cold water, then pat dry. In a medium bowl, mix shrimp, curry powder, stock concentrate, a pinch of salt, and pepper. TIP: Use less curry powder if you like a milder flavor. You can always add more when you taste and season your finished curry.

Cook, stirring occasionally, until veggies are slightly tender, 5-6 minutes. • Stir in seasoned shrimp; cook, stirring occasionally, until shrimp are opaque and cooked through, 3-4 minutes more. • Stir in coconut milk and chili sauce. Bring to a boil, then cover and turn off heat.

I normally do not eat zucchini or curry but I'm trying new meals to expand my palate (and try to eat more veggies). This was insanely good. Like, I'm pissed how much I like it. It was easy to make like most Hello Fresh meals. I don't normally do too much heat (I'm big on flavor) but even using all the curry provided, it wasn't overwhelming nor too spicy.

OMG - this is, by far, the best meal I have prepared from Hello Fresh (and I've made MANY!)! Easy to make and flavorful!! The produce was the freshest I've received and everything was so good! Only suggested feedback is to define what makes the curry "done" - I wasn't sure. SO GOOD!!!

Very good! This is the first curry I've successfully made! I wish the shrimp would have been cleaned better, I had to go through most of the pieces and clean them more thoroughly. If I am able to get this meal again, I will.

Really good but a tad sweet. Just add more lime to cut it or less coconut water. I also added fish sauce instead of more salt at the end to just give it that Asian curry taste. I enjoyed and will use recipe again!

The zucchini just disintegrated in this in a way that made eating it unappealing. I love fried onions, but they were a distraction in this dish. I think this would have benefited from actual thai chilis, curry isn't spicy. Also, the microwaveable rice is goopy, maybe because it's designed to be cold but not frozen (I've made significant use of frozen rice from TJs and it's great, this was not). Would have preferred if you gave me dry rice and I just cooked it like usual.

My new favorite! It came with a zucchini that was unusable but I had another one so it was fine. Really good spice level and the shrimp is awesome! Yumm

I love the curry, the flavors were delicious and it was very easy to prepare. The only thing I didn't like was the microwave rice, I just don't like the consistency. I would have preferred regular rice, but it didn't affect my enjoyment of the dish that much so I still give it four stars.

Very tasty, but as always with HelloFresh, it needs more veggies in the mix: we added some of our own zucchini to round out the dish.

Would love more rice to complement the shrimp curry. The amount of rice given fell short and now there is shrimp curry left with no rice.
