Wash and dry produce.
Zest and halve lemon. Finely chop sun-dried tomatoes. Trim scallions; thinly slice greens (save whites for another use).

Massage grain blend in package to separate grains; partially open package. Microwave until warmed through, 90 seconds.
In a small bowl, whisk together lemon zest, honey, 1½ packets of mustard, 2 TBSP olive oil, ½ tsp sugar, and juice from all the lemon (all the mustard, 4 TBSP olive oil, and 1 tsp sugar for 4 servings). Season with salt and pepper.

Transfer grain blend to a large bowl.
Add spinach, sun-dried tomatoes, and dressing; toss to combine. Season with salt and pepper to taste.

Divide salad between shallow bowls. Garnish with scallion greens and cashews. Serve.
