• In a small pot, combine rice, 1¼ cups water (2¼ cups for 4 servings), and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. • Keep covered off heat until ready to serve.

• While rice cooks, wash and dry produce. Zest and quarter lemon. Roughly chop cilantro. • In a small bowl, combine mayonnaise with chili sauce to taste.

• Pat chicken* dry with paper towels and season all over with salt and pepper. Heat a drizzle of oil in a large pan over medium-high heat. Add chicken and cook, stirring, until browned all over, 3-4 minutes. • Stir in carrots, sweet soy glaze, and sesame dressing. Cook until carrots are softened, chicken is cooked through, and sauce has thickened, 2-4 minutes more. Taste and season with salt and pepper. Turn off heat.

OMG - one of our favorites! The combination of seasonings (Sweet Thai Chili, Sweet Soy Glaze and Sesame Dressing, cilantro and lemon) meshed so well to make this such a tasty dish! Loved it. I happened to have a dinner guest so to make our 2 person serving go farther, I made some Broccoli in Garlic Sauce to accompany the chicken bowls.

Very good; it was quick and easy to make. I didn't use the mayo though. I put the chili sauce in the pan with the soy glaze, carrots and chicken and added a splash of water. I put that over the rice and topped it with the cilantro and onions. Hmm, hmm good!!

This recipe was really easy to make and very delicious! I'm a single person, so I usually eat one of the meals and save the other for the next day. I wish I wouldn't have put the crispy onions on until I was ready to eat the 2nd meal, as they got a little soggy overnight, but otherwise delicious, even as leftovers!

Loved this, will definitely order it again. The lemon zest and butter in rice was great. Spices and dressing added to chicken brings it to another level. The chili mayo another great flavor ... all these flavors combined fantastic

This meal was SO delicious!!! Buttery, zesty, with a hint of sweet, there was also creaminess from the Mayo. The carrots added a nice bite while the crispy onions added the perfect crunch. This will definitely be a favorite that my family and I order again. My only grievance was with the chicken. The package said chicken strips but it was more like chicken pieces. They were super super tiny. If this is fixed in the future I give this meal 10 stars.
