For today’s ready-in-a-flash meal, you’ll whip up a rich filling for toasted baguettes featuring these three flavor powerhouses. • Wash and dry produce. • Trim and thinly slice scallions, separating whites from greens. Trim and quarter mushrooms (skip if your mushrooms are pre-sliced!). Halve, core, and dice half the apple (whole apple for 4 servings).

• Heat a drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add scallion whites, mushrooms, beef, stock concentrate, a pinch of salt, and pepper; cook, breaking up meat into pieces, until mushrooms are browned and beef is cooked through, 5-7 minutes. • Meanwhile, tear Swiss cheese into 1-inch pieces. • Reduce heat to low; stir in cheese, cream sauce base, and 1⁄8 tsp nutmeg (1⁄4 tsp for 4 servings). (Be sure to measure the nutmeg—we sent more!) Cook, stirring constantly, until cheese melts and mixture has thickened, 1-2 minutes. • Remove from heat; stir in scallion greens. Season with salt and pepper if desired. TIP: While beef cooks, move on to the next step!

• Halve baguettes lengthwise, stopping before you get all the way through. Toast until golden brown. • In a large bowl, combine apple, arugula, and vinaigrette.

• Fill baguettes with cheesy beef and mushroom mixture; close to form sandwiches. • Divide sandwiches and salad between plates. Top salad with almonds and serve.

Balanced. Loved the sweet crisp apple and the acidity of the salad with mushrooms added to the creamy beef. Would love to see more salads like this as a choice to replace potatoes.
Excellent meal. Only 1 criticism: I have had your arugula-apple salad before, and somehow it was much tastier then. I think it was because you had us make a homemade dressing before, and this was pre-made. Perhaps the Greek vinaigrette is not quite the correct flavor profile to accompany this salad? It is quite powerful on the palate.
Loved the flavor, the ground beef had too much water so the beef and swiss came out like soup, this would be better over rice or pasta instead of a sandwich, the arugula salad and apple was perfect
The taste of the sandwiches was amazing, however, a different kind of roll would be nice, longer, less thick. A lot of meat wouldn't fit on the sandwiches. Also, a choice in lettuce for the salad would be nice. Not everyone likes arugula.
Sandwich was delish! I would recommend a raspberry vinaigrette for the salad, however, since there are apples and almonds in it. The vinaigrette that was sent just didn't go well. Personally, I would also choose romaine over arugula.
Fantastic! Bread came out nice and soft housing the beef and mushroom mixture. Delicious. The salad was a perfect combination.
The sandwich was good but we cut the mushrooms way smaller than the instructions said. Wasn't into the salad. The apples didn't pair well with the very savory dressing.
Everything about this one was great the salad alone. Mmm yum. Then you add the sandwich, what mushrooms are these. Yikes so good
La-la-loved This!!! The beef was so warming, tasty and satisfying. And the salad was light, sweet and so delicious!! If I make it again, I'll add beef bouillon granules for a beefier punch.
Easy prep, delicious flavors and I used the whole apple although the recipe card said to use half of it for two, but we love apples. Will definitely get again.
