This extra-rich mozzarella is layered onto pesto-slathered baguettes, and then topped with tender zucchini and fresh sliced tomato. • Wash and dry produce. Wrap baguettes loosely in paper towels; microwave for 30 seconds.
• Trim and slice zucchini lengthwise into 1⁄4-inch-thick planks. Slice tomato into 1⁄4-inch-thick rounds.
• Lightly drizzle zucchini with olive oil; season with salt and pepper. Place on a microwave-safe plate; microwave until steamed, 3 minutes.
• While zucchini steams, halve baguettes lengthwise. Spread pesto onto cut sides.
• Top bottom halves of baguettes with burrata; slice into burrata to spread. Top with zucchini. Fan tomato over top and drizzle with balsamic glaze. Close sandwiches and serve.
This recipe has potential and I like the concept, but didn't quite get there. I had two extra large zucchinis which was way too much, I would replace the burrata with fresh mozzarella slices and include a little more tomato then one tiny one. Maybe better on toasted roll rather than microwaved, maybe a ciabatta roll instead. Sandwich had a hard time staying together and was hard to eat but the flavors were good.
Might be easier to eat if zucchini and tomato were sliced lengthwise. Spreading half of the pesto on the bread before toasting it and half on after works better than putting oil on the bread before toasting it. There is plenty of oil in the pesto. Too much oil otherwise.
This was a great sandwich. The burrata was a great addition to this. I also loved how easy it was to microwave the zucchini.
I was a bit surprised to find 2 zucchinis for this recipe and had a difficult time getting all of one into a sandwich. For one sandwich, I only used half the zucchini and it worked well. When I tried to fit the whole zucchini, the sandwich fell apart and was difficult to eat.
Easy great flavor! I didn't cut the zucchini in rounds, I cut it in flat slices like the previous recipe. I like that more because they stay on the sandwiches better.
Toasted the cut bread and the texture change set off the sandwich perfectly. Zucchini were big ones, so only used one and plan to use the other in a different meal.
I don't have a microwave, so I toasted the buns and sauteed the zucchini, which I think added to the flavor. It did, however, make the sandwiches a bit messy. We didn't care; they were so good!
We decided to roast the zucchini and tomatoes and toast the bread. OMG this was MINDBLOWING!! We already can't wait to have this again!! Yum!!
Delicious. Easy to make. Again, used a bit less of pesto than directions called for but we like a little less garlic. Super tasty. The balsamic drizzle is delicious
Tasted great, but FYI for food waste purposes probably only need one large zucchini for both sandwiches (two were included)
