
The week just isn’t complete without taco night. If you agree (and how could you not?), you’re in luck! Our chefs put together a Tex Mex–style taco that’s sure to satisfy. There’s citrusy pork, bell pepper, and pickled onion, all piled into steamy-soft tortillas. Drizzle it all with a Southwest-spiced crema and you’re ready for a truly spec-TACO-lar meal.

• Wash and dry produce. • Halve, peel, and thinly slice onion. Quarter lime. Halve, core, and thinly slice green pepper into strips. Halve orange. Roughly chop cilantro.

• In a small, microwave-safe bowl, combine ¼ of the onion, juice from half the lime, ¼ tsp sugar (½ tsp for 4 servings), and a pinch of salt. Cover with plastic wrap and microwave for 30 seconds. Set aside. • In a separate small bowl, combine sour cream with ¼ tsp Southwest Spice Blend (½ tsp for 4). (You’ll use the remaining Southwest Spice Blend later.) Season with salt and pepper. Stir in water 1 tsp at a time until mixture reaches a drizzling consistency.

• Heat a drizzle of oil in a large pan over medium-high heat. Add green pepper and remaining onion; cook, stirring occasionally, until browned and tender, 5-7 minutes. Season with salt and pepper. • Turn off heat; transfer to a medium bowl. Wipe out pan.

• Heat a drizzle of oil in pan used for veggies over medium-high heat. Add pork and remaining Southwest Spice Blend. Cook, breaking up meat into pieces, until browned, 3-4 minutes. TIP: If there’s excess grease in your pan, carefully pour it out. • Stir in Tex-Mex paste, juice from orange, and a squeeze of lime juice. Bring to a simmer and cook until pork is cooked through and sauce has thickened, 2-3 minutes more. Taste and season with salt and pepper.
Swap in turkey or beef for pork.

• While pork cooks, wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds.

• Divide tortillas between plates and fill with pork filling and veggies. Drizzle with crema and top with pickled onion (draining first) and cilantro. Serve with any remaining lime wedges on the side.
Ground Beef is fully cooked when internal temperature reaches 160°.
Luckily we planned ahead and ordered four servings instead of our usual 2 because our 13 year old taco lover decided he wanted to try it too! We're so glad he did because he LOVED THEM! We did separate out the beef to be in two skillets - one with and one without citrus, but he mealed on the peppers and onions too. He said he thought it was amazing. We agree! Definitely looking for this again!
Good but not great. Recipe called for 2 whole onions for just 12 tacos. For a family 4 who eats just 3 tacos?! I used 2 oranges squeezed and garlic salt plus season all for taste. Who seasons with "salt & pepper?!" Us ethnic people like to really taste our food. Without my seasoning this would have been bland
I didn't like the pickled onions, but the seasoning for the meat was amazing. The southwest cream mix was ok. I probably should've added cheese.
I am becoming a chef with all these new recipes. I tried the pickled onions condiment that I made and it was delicious. I never would have made had I not have the ingredients
The citrus flavor in the beef is so delicious. I usually prefer corn tortillas for tacos but the flour works perfectly here!
The flavors come together so well! The pickled onion added such a unique taste. I was worried about a taco with no cheese, but it was great!
Loved the citrus touch! Cut half the orange into bitesize pieces and mixed with the onion salsa. Should have used the whole orange as it really made a flavorful difference.
This one got a bit messed up. The pepper got frozen by the ice pack and was mushy, so I bought a replacement. Then I forgot to add the cilantro and pickled onion garnishes! It was STILL totally delicious. Amazing.
We loved these tacos! They were easy to prepare, cook, and put together. How can you screw up Tacos? These were incredible tasting!
Really, really good. Had me craving more. Did NOT taste any citrus flavors as much citrus juice that went into it
