
In our humble opinion, flatbreads > pizza, any day! We know that may sound blasphemous, but stick with us. First of all, the golden, crispy crust is a veritable blank canvas. It’s not beholden to simply marinara and mozz! In fact, ours is topped with rich tomato sauce, sweet roasted pepper slices, savory pork sausage, and TWO kinds of cheese. Can your ’za do that?! Yeah, we didn’t think so.

• Adjust rack to top position (top and middle positions for 4 servings) and preheat oven to 450 degrees. Wash and dry produce. • Halve, peel, and cut onion into ½-inchthick wedges. Slice top off green pepper; remove core, then cut crosswise into ½-inch-thick rings.

• Toss onion and green pepper on a lightly oiled baking sheet; season with salt and pepper. Add sausage* to same sheet. (For 4 servings, you may need to divide between 2 sheets; roast on top and middle racks.) • Roast on top rack, flipping halfway through, until veggies are tender and sausage is cooked through, 15-17 minutes.

• Meanwhile, in a medium microwave safe bowl, combine ¼ cup water and 2 TBSP butter (1/3 cup water and 3 TBSP butter for 4 servings). Microwave until water is hot and butter has melted, 1 minute. • Whisk in tomato paste until smooth. Season with salt and pepper.

• Once roasted, remove veggies and sausage from baking sheet. Carefully place flatbreads on same sheet. (For 4 servings, divide between 2 sheets; toast on top and middle racks.) • Toast on top rack of oven until golden, 3-4 minutes. • Meanwhile, carefully slice sausage on a diagonal into ½-inch-thick pieces.

• Once flatbreads are toasted, remove sheet from oven and heat broiler to high. • Evenly spread flatbreads with sauce, then top with mozzarella, Monterey Jack, sausage, and veggies. Season with salt and pepper. • Broil until cheese melts and flatbreads are golden brown, 3-5 minutes. (For 4 servings, broil in batches.) TIP: Watch carefully to avoid burning.

• Allow flatbreads to cool slightly, then slice into pieces. • Divide between plates and serve.
My husband was thrilled because one of his favorite pasta dishes is sausage, green pepper and onion in a tomato sauce. So this was the same thing on a flatbread! One of the easiest recipes to make so far too.
I made it work, but didn't think the recipe was the best. I added pepperoni. I used a separate pan to bake/broil the flatbread. Should have put sausage on a separate baking sheet, as cooking time was much longer for it than for veggies. Would like to have this with the chicken Italian sausage you use in some recipes.
We put our own spin on these pizzas. We made 1 flatbread following the directions and ingredients and the other we cooked one of the sausage links as ground pork and roasted red peppers. Both versions were delicious!
I really liked this recipe. Two suggestions. My veggies were a little overcooked when i put them in the broiler. It may be because i sliced them too thin. Or, it might have been better to have staggered cooking times for the sausage and veggies. While adding butter to the tomato paste made it a rich creamy tomato sauce, i think it would have been good to add a spice packet. I made one flat bread using your recipe (with some pablano pepper for a little heat) and a second using an arrabbiata sauce.
Great choice for a quick, tasty dinner. The sweetness of the roasted onions and the slight kick of heat from the peppers pairs nicely with the nutty cheeses and italian sausage.
So Good and So Easy to make! There is so much meat with this recipe and it makes for the best Flatbread. The only thing I would change would be to add a little Italian seasoning for the sauce but still 4 stars!
Easy preparation and delicious! The carmelized onions and Italian pork sausage gave great flavor! I added Italian seasoning to the tomato sauce to add even more flavor!
This is really tasty but could always use more cheese, which we add ourselves. I also stir in some red pepper chili flakes to the sauce, to give it a little more taste. Had lots of cooked sausage left over that can be added to another meal. Very filling!
This was surprisingly one of our favorites. I've had so many disappointing "flat breads" that I did not have high hopes. The hatch chilis and onions are the star! The flatbread itself was perfect.
Enjoyed this meal, although placing the flatbread on the sheet that had previously warmed the vegetables resulted in a soggy crust. Changed the routine for the second flatbread, and the meal was crunchy and good.
