With the addition of butter in the eggs, this is AMAZING. I love that this doesn't require the stove because who has time for that and washing produce in the morning?? The spicy crema was perfect here, as was the honey mustard dressing. Love this recipe!

Honestly not a fan of arugula, and eggs are just so-so. But when built as instructed with a toasted bun and the spicy crema these ingredients come together to make an exceptional sandwich.

I have a new way to cook eggs for sammies! One egg only took 30 seconds in my microwave. Don't wait to fix this: The arugula does NOT keep for 4-5 days. I picked out enough to put on one sandwich. But seriously, this is delicious.

Was never a fried egg person and still really enjoyed this sandwich. As microwave egg cooking never works for me, I just did it in a pan with some butter, and steam melted the gouda on top the egg.

I like arugula, but wish there was a variety for the salad - mixed with spinach and green leafy lettuce. We LOVE the honey dijon mustard dressing. That always goes over well with us in any of the meals.

This was very bland, even with the hot sauce. The other Gouda egg sandwich with spicy mayo and guac is much more flavorful.
