Cooking Steps

Start Prep & Cook Sweet Potato
1

• Wash and dry produce. • Peel and dice sweet potato into ½-inch pieces. Place in a large microwave-safe bowl. Cover tightly with plastic wrap. • Microwave sweet potato until tender, 6-8 minutes. Carefully remove plastic wrap (watch out for steam!).

Finish Prep & Cook Filling
2

• While sweet potato cooks, drain corn, then pat dry with paper towels. Trim, peel, and cut carrots into sticks (like fries; ours were 3 inches long and 1⁄3 inch thick). • Heat a large drizzle of oil in a large, preferably nonstick, pan over medium heat. Add garlic powder, half the corn (all for 6 servings), salt, and pepper. Cook, stirring occasionally, until corn is warmed through, 3-4 minutes. • Turn off heat. Transfer corn to bowl with sweet potato; mash with a potato masher or fork until combined and sweet potato is mostly smooth. Wash out pan.

Assemble & Cook Quesadillas
3

• Place tortillas on a clean work surface. Add sweet potato mixture to bottom half of each tortilla; top with Mexican cheese blend. Fold tortillas in half to create quesadillas. • Heat a large drizzle of oil in pan used for filling over medium heat. Add quesadillas and cook until tortillas are browned and cheese melts, 3-4 minutes per side. Transfer to a cutting board. (For 6 servings, you may need to work in batches, adding a drizzle of oil for each batch.)

Serve or Stash
4

• To serve: Cut quesadillas into 3 wedges. Divide between plates and serve with mango, carrot sticks, and chocolate chips. • To stash: Let quesadillas cool completely before cutting into 3 wedges. Refrigerate quesadillas, mango, and carrot sticks in separate containers and pack as desired!

Review summary

Updated on Feb 2026
  • Flavor: Some enjoyed this kid-friendly twist, while others found it bland; consider adding Mexican street corn seasoning for extra zip 🌶️.
  • Ease of prep: Many had issues with microwaving sweet potatoes; try boiling or reducing microwave time to avoid burning.
  • Suggestions: Consider adding black beans for heartiness. Some preferred skipping corn or swapping sweet potato for avocado.
  • Portions: Sweet potato quantity was insufficient for some; using a larger potato or adding beans could help bulk up the filling.
  • Kid-friendly: Several parents reported their children enjoyed the meal, especially the quesadillas and pineapple.

We don't have kids in the house, not sure why I even picked this, but it was very good!!!! I would have never thought to make something like this but it was very tasty. Love the fact that you can make ahead and have it to pack in your lunch. The only thing I didn't like was the sugar sweetened pineapple. Should only use pineapple packed in its own juice. No need to add sugar to fruit!

This was great for lunches, simple and tasty. I cooked the sweet potato and the carrots together and put them in the quesadilla and skipped the corn. Didn't use the chocolate nibs, they looked a bit dried out. Pineapple pieces in fruit juice were good too.

Loved this! (I ate it myself). I added black beans and Mexican street corn seasoning. It was so good!

Rating 4 stars because its such a wonderful way to give back to charity. The quesadillas were good, it was definitely less gourmand than some hello fresh recipes but its a great lunch for the kids!

The sweet potato that came was very small for 6 quesadillas and burned in the microwave (cooked as instructed at the minimum time), so it was unusable. Luckily had avocados on hand and switched it out for that and the full can of corn.

The sweet potato that I got was a little funky. I feel like I should have just boiled it rather than using the microwave, it ended up with a strange texture. Otherwise this was good.

The recipe is a good idea, and I would do it again at home. Needs more potato than what was sent and the carrots did not taste good. :(

Chocolate chips is such a random addition. I don't get it. The quesadillas were delicious though.

Quick easy, but the chocolates aren't necessary for this or good for ones diet. Wish it were replaced with something else.
