• Wash and dry produce. • Cut bacon* crosswise into 1⁄2-inch pieces. • Heat a large dry, preferably nonstick, pan over medium-high heat. Add bacon and cook, stirring occasionally, until bacon begins to crisp and fat renders, 4 minutes. (The bacon will finish cooking in the next step.) • Meanwhile, in a medium microwave-safe bowl, combine broccoli, garlic powder, 1 TBSP water (2 TBSP for 4 servings), a pinch of salt, and pepper. Cover with plastic wrap and microwave until tender, 1-2 minutes. Set aside for use in the next step.

• Add potatoes and tomatoes to pan with bacon; season with a pinch of salt and pepper. (If there’s not enough bacon fat, add a drizzle of oil.) Cook, undisturbed, until potatoes are crispy on one side and bacon is cooked through, 3-5 minutes. Stir, gently scraping up any crispy bits on the bottom. TIP: If potatoes start to stick to the pan, add a splash of water. • Top potato skillet with broccoli. Sprinkle everything with cheddar. Cover and cook until cheese melts, 1-2 minutes.

Potatoes came already prepped so I just had to pop the broccoli in the microwave while the bacon crisped up then toss potatoes in and brown them add broccoli on top and cover with cheese. I was able to clean the kitchen and do some dishes from previous meals while the cheese melted. Topped with sour cream, ranch and Cholula was pretty and delicious. Really took less time than trying to pick something off (insert delivery service) and place an order. Enough downtime to clean as you go. Bonus dishes loaded, people fed.

Thank you thank you thank you for a dish with potatoes that I didn't have to slice up first! And for instructing the cook to pre-slice the bacon before cooking it - I already do that anyway. I did have to cut the broccoli into bite-size pieces (to match the picture) but it was nice that I didn't have to do much else, and the rest came together easily. Will definitely order this again.

It was mainly me...I think I didn't have a big enough pan and having all those potatoes and broccoli in the pan with the bacon it took much longer to cook than it should have and my smoke alarm went off in my apartment 🤷🏼‍♀️🤦🏼‍♀️

We absorbed much of the bacon grease with paper towels before adding anything else. Added a little avo oil for the remainder. The amount of bacon fat to cook in would have made everyone feel a little ill. Tasty dish and certainly easy.

Very quick and delicious, I wish I could substitute the ranch for more sour cream or something. Also make sure to trim your broccoli if needed
