Spread half the sourdough slices with fig jam; place on a clean work surface, jam sides up. Top with 2-3 slices of cheese and remaining bread.
Melt 1 TBSP butter in a large, preferably nonstick, pan over medium heat. Add sandwiches and cook until bread is golden and cheese melts, 4-6 minutes per side. (Press sandwiches down with a spatula to ensure even browning; lower heat if browning too quickly. Work in batches if necessary, adding more butter if needed.)
Cut each sandwich in half on a diagonal and serve.
