Wash and dry produce. Zest and quarter lime. Slice tomato into ¼-inch rounds. Transfer tomato slices to a plate; season with a squeeze of lime juice, salt, and pepper. Set aside to marinate.
Pat chicken dry with paper towels. Halve chicken lengthwise; thinly slice crosswise.
Heat a drizzle of oil in a medium pan (large pan for 4 servings) over medium-high heat. Add chicken, 1 tsp Fajita Spice Blend, 1 TBSP butter, and 1 TBSP water (for 4, use 2 tsp Fajita Spice Blend, 2 TBSP butter, and 2 TBSP water). Cook, stirring occasionally, until warmed through, 2-4 minutes.
Sprinkle Mexican cheese blend over chicken mixture; cover pan and turn off heat.
Meanwhile, in a small bowl, combine mayonnaise, a squeeze of lime juice, and as much lime zest as you like. Taste and season with salt and pepper. TIP: For tangier mayo, add more lime juice!
Halve and toast baguettes; spread cut sides with a thin layer of zesty mayo. Fill baguettes with cheesy chicken and marinated tomato. Divide sandwiches between plates and serve.
This was super tasty, I added a couple drops of honey to the mayo mixture, and that really made a difference, but the biggest thing is I don't think that these baguettes were right for this, they just could not hold up. I don't really have a suggestion for what would have been better but yeah, the whole baguettes didn't hold up.
Really good sandwiches. The chicken was very good. We did add some onions to the chicken mixture and a clove of garlic to the mayo to give it even more flavor but they would have been delicious even without the addition.
This is the first sandwich I have ever enjoyed a raw tomato on! Marinating them in a ton of lime and some seasoning just turned them into a flavour bomb!
This was fast and simple to make. I would like a different crema sauces on the top perhaps like something picante and not mayonnaise based.
I mixed the mayonnaise, lime juice, fajita seasoning, salt and pepper to make a sauce for the sandwiches. It was delicious!

Too dry, even after adding more water and tomatoes. Needed more mayo. But good overall. Made again tonight and doubled mayo and lime juice and added a tomato. Much better.
Thought this was enough for 4 people but it was only for two. It was really good though.
Really liked the bread, cheese and the sauce these came with, it gave the chicken breast additional flavor.
We also loved this one, but felt the meal size itself was small.
