Buffalo chicken meets its molten mozzarella match in this saucy sensation! Juicy chicken gets a double dose of Frank's seasoning, then takes a luxurious butter-hot sauce bath before being crowned with melty cheese. The spicy mayo adds a creamy kick that perfectly balances the heat, while fresh tomato rounds provide a cool, crisp contrast. These golden-toasted beauties deliver restaurant-quality Buffalo flavors in your own kitchen—no wings required, just pure melted bliss!

Cooking Steps

Prep
1
  • Wash and dry produce.

  • Halve buns; toast until golden brown. Thinly slice tomato into rounds.

Make Sauce
2
  • In a small bowl, combine mayonnaise and ¼ tsp Frank’s Seasoning Blend (½ tsp for 4 servings). Stir until well combined.

Heat Chicken
3
  • Pat chicken dry with paper towels. (TIP: To get even more Buffalo flavor in every bite, carefully cut each chicken breast horizontally into two thin cutlets.) Season all over with remaining Frank’s Seasoning Blend.

  • Heat a drizzle of oil in a medium, preferably nonstick, pan over medium-high heat. Add chicken and cook until slightly warmed, 1-2 minutes per side. Stir in hot sauce and 1 TBSP butter (2 TBSP for 4 servings) until butter has melted; baste chicken with sauce.

  • Top chicken with mozzarella. Cover and cook until cheese melts, 1-2 minutes.

Finish & Serve
4
  • Spread cut sides of toasted buns with spicy mayo. Fill buns with cheesy chicken, any remaining sauce in pan, and tomato. Divide melts between plates and serve.

Easy, quick and very yummy. A little salty from the buffalo seasoning, probably adding more mayo would cut it some. The tomatoes help cut some of the salt too, but if you don't eat the tomatoes it is hard to find a salt balance.

Super easy to cook, the flavor was there but sadly my tomato was already bad when I got it. So I substituted it with a pickle on top and it works for that acidity level.

This sandwich hit the spot. It had just a kick of heat from the rub. The sauce had flavor and no heat, which was a hit with the kids, since they like the wing flavor and not the heat. We did not put the rub on their chicken. The kids were not impressed, but the adults gobbled theirs down. Would be nice to have an option for a hotwing flavored rub for kids and those who like the flavor but can't handle any heat.

Great meal, but the bun needs to be bigger to match the chicken. Also, it needs fries/potato wedges; the bun needs to be pre-sliced. Another great easy meal.

Took too long to make and the payoff wasn't that great. The buffalo sauce didn't have a good foil with it like the classic blue cheese or crispy celery. It was just hotsauce on chicken with congealed cheese. Not awful, but not good either.

Had this for dinner and was so good. I would have added a fresh romaine leaf if I had it but did add a thin slice of sweet yellow onion.

These were delicious! I added some spinach lettuce to it as well that I had in my fridge already and that really took it to the next level.

The chicken pieces were too thick to really make it enjoyable to eat. Sliced horizontally to make the chicken thinner would have made it much easier to eat and therefore easier to enjoy. The flavors were good.

Easy and tasty. Thanks for keeping the sauce separate as we can't use much.
