Bring truffle butter to room temperature. Wash and dry produce.
Trim and thinly slice mushrooms (skip if your mushrooms are pre-sliced!). Halve, peel, and thinly slice onion.
Heat a drizzle of olive oil in a large, preferably nonstick, pan over medium-high heat. Add onion and mushrooms; cook, stirring occasionally, until browned and softened, 8-10 minutes. Season with salt and pepper to taste. Turn off heat; transfer to a medium bowl. Wipe out pan.
Spread one side of each sourdough bread slice with softened truffle butter; place half the slices on a clean work surface, buttered sides up. Evenly top with cheese, then remaining bread slices, buttered sides down, to form sandwiches. Heat a drizzle of oil in same pan over medium heat. Add sandwiches and cook until bread is golden and cheese has melted slightly, 2-3 minutes per side. (Work in batches if necessary.)
Halve on a diagonal and serve.
This is an amazing grilled cheese sandwich. The garlic truffle butter was amazing with this sandwich and the mushrooms elevated the meal. We served it with the creamy tomato basil soup. YUM!
I'm a huge fan of mushrooms, anything truffle and grilled cheese, so the combination of the above is a dream! Has to be one of the best grilled cheese I've ever had in my life and I'm from Wisconsin, so that's saying a lot!
I've always put butter on the outside of the bread before grilling. This recipe calls for it on the inside. What a game changer! The mushrooms were super fresh, the bread was perfect! One of the best grilled cheeses I've had in my life and I still can't believe that I cooked it. It was restaurant quality!
It was very good! Just a heads-up, the mushrooms were a bit much, so I cooked those separately, but the onions and cheese were a nice combo! Loved the black truffle butter.
This was great! Love the truffle butter. The instructions could have been clearer that the buttered side was on the inside of the sandwich. I had to read it a few times to figure that out.
The truffle butter was an excellent choice with strong umami lending the sharp cheddar. The onion was an unexpected pleasure but I wished I cut the onions into slightly thicker rings.
Loved this sandwich. I used regular butter for mine, but the truffle butter for my husband's. We paired it with the broccoli cheddar soup. Quick and yummy meal!
Never had a grilled cheese with mushrooms. Liked it. It was different and easy to make.
The truffle butter was very tasty. I did not like the combination of the mushrooms and onion with the cheese. The instructions don't have you put butter on the outside of the bread before cooking in the pan, but has you put oil in the pan... this did not work well, the bread stuck to the pan and broke apart when attempting to pry them out of the pan and did not turn out nice and crisp. The truffle butter was very good though.
Truffle flavor was good and not over powering. Very generous helping of mushrooms from HF.
