
Sugar and spice and everything nice; that’s what these hot honey peach pork chops are made of! Hot honey is swirled with peach jam, butter, and lemon juice for a sticky-sweet glaze for pork. Roasted carrots and zucchini are tossed with lemon zest and a pinch of chili flakes, then paired with buttery rice on the side. Spicy-sweet and perfectly balanced—these pork chops will leave you simply s(peach)less!

• Adjust rack to top position (top and middle positions for 4 servings) and preheat to 425 degrees. Wash and dry produce. • Trim, peel, and dice carrots into ½-inch pieces. Trim and halve zucchini lengthwise; cut crosswise into ½-inch-thick half-moons. Zest and quarter lemon.

• In a small pot, combine rice, ¾ cup water (1½ cups for 4 servings), and a pinch of salt. Bring to a boil, then cover and reduce heat to a low simmer. Cook, covered, until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.

• Toss carrots on one side of a baking sheet (spread out across entire sheet for 4 servings) with a drizzle of oil, salt, and pepper. Roast on top rack for 10 minutes. • Remove sheet from oven. Toss zucchini on empty side with a drizzle of oil, salt, and pepper. (For 4, leave carrots roasting; toss zucchini on a second sheet and roast on middle rack.) Return to oven until veggies are tender and lightly browned, 10-15 minutes more. • Let cool 2 minutes; transfer veggies to a medium bowl. Toss with lemon zest and chili flakes to taste.

• Meanwhile, pat pork* dry with paper towels. Season all over with salt and pepper. • Heat a large drizzle of oil in a large pan over medium-high heat. Add pork and cook until browned and cooked through, 4-6 minutes per side. • Turn off heat; transfer pork to a plate to rest.

• In pan used for pork, stir in Mike’s Hot Honey®, jam, stock concentrates, ¼ cup water (½ cup for 4 servings), and juice from one lemon wedge (two wedges for 4). Increase heat to medium high and bring sauce to a simmer. Cook, stirring constantly, until thickened, 2-3 minutes. Remove from heat and stir in 1 TBSP butter (2 TBSP for 4); season with salt and pepper. • Transfer pork to pan with sauce; turn to coat.

• Fluff rice with a fork; stir in 1 TBSP butter (2 TBSP for 4 servings) and season with salt and pepper to taste. • Divide rice, veggies, and pork between plates. Spoon any remaining sauce over pork. Serve with remaining lemon wedges on the side.
Pork is fully cooked when internal temperature reaches 145°.
This was fantastic. I'm not a huge fan of spicy, but Mike's honey was perfect. Having the red pepper flakes on the side let my husband add them to his meal without making me have to add them to mine. The sauce was absolutely delicious and made me want to lick my plate clean!
Used regular honey instead of hot honey and it was delicious! My husband isn't a peach fan but loved the sauce as it was more sweet and savory than peachy. We added some lemon zest to the rice as well as the vegetables.
Pork chops were tender, veggies cooked but not too crispy, and rice is simple yet complimentary. Love the sauce, since it's not too sweet or too spicy. Love this dish!
I absolutely love Mike's Hot Honey I will be buying some for my kitchen. It really flavored the sauce I would say A+! I think maybe add something else to the rice maybe a veggie.
This was delicious. I added lemon to the rice as well and my god, it was tasty. Least favorite was the "hot" honey, as it wasn't really that hot. But I wasn't complaining because everything else was so good.
Amazing. First time trying, and was not disappointed. Great flavor profile. Would like to taste just a little more of the peach. Who would have thought that combination of flavors would paired so nicely together. Great JOB chef!

I gave this the full 4 stars because it is as advertised, but there was something missing, maybe some texture in the rice? The lemony zucchini was great.

Hard to pinpoint what this dish was lacking, I think I was most disappointed that the Mike's hot honey flavor was totally lost. The sauce was sweet, came together ok, but for being called out in the name, you wouldn't know that it was there. Pork was good, rice was good. The veggie instructions were just all wrong. The red pepper flakes for the veggies were either super potent or just the wrong proportion. We like spicy -intentionally ordered a spicy dish - liked the flavor - it was just overpowering, and I only added half the chili flakes! They were a chore to eat. Certainly didn't even notice the lemon zest flavor. Also instructions have the veggies cooking too short, they weren't done, had to raise heat and cook an extra 10-15 minutes. It's my least favorite HF, which I still enjoyed everything except the veggies, but I wouldn't do this again.
