• Wash and dry produce. • Heat a large drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add pork* and season with salt and pepper. Cook, breaking up meat into pieces, until pork begins to brown, 3 minutes (it’ll finish cooking in the next step).
• Meanwhile, break up broccoli into bite-size pieces if necessary. Massage rice in package to break up grains. • Add another drizzle of oil to pan with pork. Add broccoli and rice; season with a big pinch of salt and pepper. Stir to combine. • Stir in 1⁄4 cup water (1⁄2 cup for 4 servings). Cover pan with lid. Cook, undisturbed, until broccoli is tender and pork is cooked through, 3-4 minutes.
• Remove pan from heat. Stir in garlic-ginger scallion paste. Taste and season with salt and pepper if desired. • Lightly crush peanuts in their bag. • Divide pork and rice skillet between bowls; top with peanuts and serve.
