The magic ingredient that makes these quick one-pan pork tacos sing is a speedy homemade mango salsa that adds tangy-juicy-tropical goodness to every tasty bite. Tuck that spiced pork into soft flour tacos along with charred pepper and onion, top with a spoonful of mango salsa, and finish with a drizzle of sour cream for a plate that pops.

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

Prep
1

• Wash and dry produce. • Drain mango, reserving juice in a small bowl; roughly chop mango. Halve, peel, and thinly slice onion; mince a few slices until you have 2 TBSP (4 TBSP for 4 servings). Roughly chop cilantro. Quarter lime. Halve, core, and thinly slice green pepper into strips.

Make Salsa
2

• In a second small bowl, combine mango, minced onion, half the cilantro, and a squeeze of lime juice. Season with salt and pepper.

Cook Veggies
3

• Heat a drizzle of oil in a large pan over medium-high heat. Add sliced onion and green pepper. Cook, stirring occasionally, until lightly browned and slightly softened, 3-4 minutes. Season with salt and pepper. Reduce to medium heat.

Make Filling
4

• Add pork* and Southwest Spice Blend to pan with veggies; season with salt and pepper. Cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes. • Stir in mango juice and Tex-Mex paste; cook until thickened and saucy, 1-2 minutes more. Taste and season with salt and pepper. • Remove pan from heat and stir in remaining cilantro.

Warm Tortillas
5

• While pork cooks, wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds.

Serve
6

• Divide tortillas between plates and fill with pork filling. Top with mango salsa and dollop with sour cream. Serve with any remaining lime wedges on the side.

Ground Pork is fully cooked when internal temperature reaches 160°.

The pork tacos were so flavorful and yummy. The mango salsa was much better than expected. This one pan meal was so good and easy to prepare.

The combination of tender pork and the sweet, tangy mango salsa was absolutely delicious. It was surprisingly easy to prepare, and the flavors were perfectly balanced. This will definitely become a regular in my meal rotation.

This was Delicious! The soft taco shells were really good, mango salsa was a great complement and the lime, cilantro and sour cream balanced everything out nicely. My whole family loved this dinner.

I've never used ground pork for tacos but this made me a believer in using the different protein. The mango salsa was absolutely stunning. This dish did not disappoint.

I would have preferred fresher mango, if possible. The pre-packaged mango seemed like a low-quality ingredient. Also, the portioning on this seemed off -- there was plenty of pork for the number of taco servings, but not enough mango salsa and sour cream for four servings. Overall, good flavors but it was an average dish.

Far and away my favorite Tacos ever! I now like ground pork much more than ground beef. The mango in the sauce is surprising and perfect! I wish there was one more packet of sour cream for 6 tacos!

Tasty! However could've used another tex-mex packet. & 2 packets of sour cream for 12 tacos is not enough. *Tip if you know this meal is in your box, grab a fresh mango &a couple hot peppers to make the salsa next level. Def will order this one again!

Doubled mango in salsa (used frozen). Added all cilantro, lime zest, and juice to salsa. Omitted sour cream. Cooked onion x2min, then added peppers x2min, then added pork etc.

One of our family favorites, the mango adds so much to this recipe. Wish the sauce weren't so runny, and the tacos so messy as a result.
