
Seared chicken is roasted until juicy, then thinly sliced and nestled into a steaming pho-spiced broth with ramen noodles and coleslaw mix. Each bowl is topped with scallions and crunchy wonton strips—add them as you eat to keep them crispy! Hoisin, Sriracha, and lime wedges on the side let everyone dial in their own balance of sweet, spicy, and tangy.

Adjust rack to middle position and preheat oven to 450 degrees. Wash and dry produce.
Trim and thinly slice scallions. Quarter lime.

Pat pork* dry with paper towels and season all over with salt and pepper.
Heat a drizzle of oil in a large, heavy-bottomed pot over medium-high heat. Add pork and sear, turning occasionally, until browned all over, 4-8 minutes. TIP: Depending on the size of your pan, you may need to work in batches.
Turn off heat; transfer pork to a baking sheet. Reserve pot. TIP: For easy cleanup, line sheet with aluminum foil first.

Roast pork on middle rack until cooked through, 9-11 minutes. Transfer to a cutting board to rest.
While pork roasts, to pot used for pork, add 3½ cups water (7 cups for 4 servings), chicken stock concentrate, and pho stock concentrates. Bring to a boil.

Once broth is boiling, reduce heat to medium; add ramen noodles and coleslaw mix. Cook, stirring occasionally, until tender, 2 minutes.
Turn off heat. Taste and season with salt and pepper if desired.

Thinly slice pork crosswise.
Divide noodles between bowls. Top with pork; garnish with scallions and a few wonton strips. TIP: Don’t add all the wonton strips at once—add as you eat to keep them nice and crispy!
