• In a small pot, combine ¾ cup water and 1 TBSP butter. (For 4 servings, combine 1½ cups water and 2 TBSP butter.) Bring to a boil, then stir in rice. Cover and reduce heat to low. Cook until rice is tender, 15-18 minutes. • Keep covered off heat until ready to serve.

• While rice cooks, wash and dry all produce. • Halve, peel, and thinly slice half the onion (whole onion for 4 servings); mince a few slices until you have 2 TBSP (3 TBSP for 4). Halve, core, and thinly slice bell pepper into strips. Dice tomato. Finely chop cilantro. Quarter lime.

• Heat a large drizzle of oil in a large pan over medium-high heat. Add sliced onion and bell pepper. Cook, stirring, until just softened, 4-5 minutes.

• Tear pulled pork* into smaller pieces. Add to pan with veggies along with another large drizzle of oil. Season with Fajita Spice, salt, and pepper. Cook, stirring, until pork is warmed through, 2-3 minutes. • Stir in stock concentrate and ½ cup water (1 cup for 4 servings). Bring to a boil, then reduce heat to low; stir in 1 TBSP butter (2 TBSP for 4). Simmer until saucy, 1-2 minutes.

• While pork simmers, in a small bowl, combine tomato, minced onion, half the cilantro, juice from half the lime, salt, and pepper.

Finish & Serve

• Fluff rice with a fork; season with salt and pepper. • Divide rice between bowls. Top with pork mixture, salsa, Monterey Jack, and sour cream. Sprinkle with remaining cilantro. Serve with remaining lime wedges on the side.

Delicious meal and very quick and easy to prepare. Although it tasted delicious the pulled pork was tougher and chewier than it should be. Plus one very large piece of the meat was just a huge hunk of fat and not meat. Still would order it again because of the ease of making and the great flavor.

This is a good meal with good flavors. There was a generous amount of meat but if we do this again I will cut back on the amount of green peppers. It definitely needed more rice for each serving. The tomato salsa lacked flavor and spices.

We made this and shredded the pork even more and cooked it with the peppers and onions, bought tortilla shells and fried them and dipped our tacos in salsa verde and had the tomatoes, lime, and sour cream as optional toppings. It was INCREDIBLE. We felt like we had spent [MASKED] at a mexican restaurant. And it made 5 tacos each!! Good job Hello Fresh.

So good! I will say that I tweaked the recipe a tad. I didn't make the salsa and just cooked the tomatoes in with the other veggies (not a fan of raw tomatoes). I also added guacamole to it which I think took it to the next level. But I would so make this again!

I had to toss several chunks of fat from the pulled pork before cooking. I modified the salsa by adding my own finely chopped jalapeno pepper for an extra kick!

I was really hoping to like this one but there were a few areas that I was not overly impressed. I found that the pulled pork was a bit fatty and the tomato was not overly ripe. I set out the cilantro because I am not a fan. Definitely could have used more cheese. I think other people might enjoy it more than me because this one was not my favorite.

By far one of my favorite meals. I was worried about the already cooked pulled pork as we bbq our own, but it was fantastic! I will definitely be ordering more bowls.

This was the best of the 4 dishes I received this week. 2 small issues but I won't hold it against it. First, I didn't get the fajita seasoning so I substituted taco seasoning. It's what I had on hand. It's similar but different. Second, I was surprised to see the pork didn't have a smoke ring. Instead it's a crockpot/pressure cooked tasteless pork. The amount the pork/pepper/onion mix makes is insane. Huge portion. Husband approved. Will order again!
