Make Chili Sour Cream

• In a small bowl, combine sour cream with sriracha to taste. Season with salt and pepper.

Cook Filling

• Heat a drizzle of oil in a large pan over medium-high heat. Add scallions and cabbage; season with salt and pepper. Cook, stirring, until softened, 4-5 minutes. • Add beef *, garlic powder, and 1 tsp sugar (2 tsp for 4 servings). Cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes. • Stir in sesame oil and half the soy sauce (all for 4). Taste and season with salt, pepper, and up to ½ tsp more sugar.

Warm Tortillas

• While filling cooks, wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds.

• Divide tortillas between plates. Spread a bit of sriracha sour cream onto each tortilla; top with beef filling, a bit of pickled veggies, and cilantro leaves. Drizzle with any remaining sriracha if desired. Serve with any remaining pickled veggies on the side.

This dish was a joy to not only prep, but to eat as well. This was my first hello fresh meal and was super impressed with the ease of instructions. The Tuscan tacos had the perfect blend of savory and sweet taste. The pickled veggies adds that sweet and sour to mix perfectly with the siracha cream spice. The good: I loved every bit of it. I never would have dreamed of putting quick pickled veggies on top of a taco, just would have crossed my mind. The crunch and tang it added was superb 👌 My husband loved everything except the cream sauce. He despises pretty much anything that has sour cream in it. I have to be really sneaky about it.

Such a fun twist on the standard taco. I love pickled veggies so I julienned them and started the pickle process about 3 hours before I made the meal. Savory, and a slight kick with the sriracha sour cream.

This was very good and easy to make. I love the quick pickling of the veggies. Next time I would use less sesame oil. The oil was dripping out of the taco.
