• Bring honey to room temperature. (TIP: Place in a bowl of warm water if crystallized.) Wash and dry produce. Drain and rinse beans. Quarter lime. Gently crush tortilla chips in the bag. Trim and discard root end from lettuce; quarter lengthwise.
• In a medium microwave-safe bowl, combine ¾ of the Tex-Mex paste (you’ll use the rest in the next step) with a large drizzle of oil. Stir in beans. Microwave for 1 minute; stir in juice from one lime wedge (two wedges for 4 servings). Set aside.
• In a large bowl, whisk together mayonnaise, honey, remaining Tex-Mex paste, juice from half the lime, and 2 TBSP olive oil (4 TBSP for 4 servings). TIP: Tex-Mex paste is slightly spicy—if heat-sensitive, use less.
• Wrap tortillas in damp paper towels; microwave until warm and pliable, 30 seconds. Place tortillas on a clean work surface; spread guacamole across the bottom third of each tortilla. Top with Tex-Mex beans; sprinkle with half the Mexican cheese blend and half the tortilla chips. Place 1-2 lettuce leaves on chips (you’ll use the rest for salad).
• Fold bottom side of each tortilla up over filling, then fold over left and right sides toward the filling. Roll up tortillas, starting with filled sides, to form wraps.
• Halve wraps on a diagonal. Divide wraps and remaining lettuce between plates. Drizzle chile-lime dressing over lettuce; sprinkle with remaining Mexican cheese blend and remaining tortilla chips. Serve with any remaining lime wedges on the side.
This was incredibly tasty!! I grilled some chicken to add to mine, enjoy my kiddo enjoyed theirs vegetarian style. The tex-mex seasoning paste for the kidney beans just makes it. I like the texture & mild sweet taste of the kidney beans over black beans or pinto. I added additional greens to the salad as there was too much dressing and who doesn't need more salad in their life. This will be in heavy rotation.
Finally, easy and fast to make, plus healthy. Still not sure about the directions--and wrapping the wrap, and the beans exploded in the microwave. But the ingredients and easy recipe was very good.
I actually preferred it all in one bowl instead of as wraps with a side salad, so a few more chips would have been nice. I also added baby tomatoes and cucumber to the mix.
Love the flavor of these things! I take the extra salad and make another wrap for my husband so that he has two. They are light and easy to make.
One day I made this and had not yet exercised that day - the beans were so caloric. The next day I went rock climbing and packed this as my lunch - it was perfect for such a high-output day.

This would have been a decent lunch but I had to figure out how to make my own tex-mex paste because that ingredient was left out of my bag and also the lettuce was not good quality. I'm afraid hello fresh is slipping. This week I had 2 meals with either missing or low quality ingredients. I want the old Hello Fresh back! I will say thank you though. As soon as I reported the issues I was refunded for those ingredients. That is great customer service and it was easy.
