Ground turkey is seasoned with Tuscan Heat spice blend and simmered with grated zucchini in a rich marinara sauce enriched with cream cheese and sour cream. The creamy tomato sauce clings to al dente spaghetti, creating a satisfying weeknight dinner that sneaks extra vegetables into every forkful. Finished with Parmesan for a savory touch.

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

Prep
1
  • Bring a large pot of salted water to a boil. (TIP: Cover pot with lid to bring water to a boil more quickly.) Wash and dry produce.

  • Trim zucchini; grate on the largest holes of a box grater.

Boil Pasta
2
  • Once water is boiling, add spaghetti to pot. Cook, stirring occasionally, until al dente, 9-11 minutes.

  • Reserve 1 cup pasta cooking water (1½ cups for 4 servings); drain.

Cook Ragù
3
  • Heat a drizzle of oil in a large pan over medium-high heat. Add turkey*, Tuscan Heat Spice, garlic powder, ½ tsp salt (1 tsp for 4 servings), and pepper. (TIP: Not sure how much turkey to use? Refer to the “Before you start” section at left for guidance.) Cook, breaking up meat into pieces, until lightly browned, 2-4 minutes.

  • Add zucchini and tomato paste; cook, stirring, until zucchini is tender and turkey is cooked through, 2-3 minutes more.

  • Stir in marinara sauce, stock concentrates, and ½ cup pasta cooking water (⅔ cup for 4). Simmer until slightly thickened, 1-2 minutes.

  • Reduce heat to medium low. Stir in cream cheese, sour cream, half the Parmesan, and 1 TBSP butter (2 TBSP for 4) until melted and combined. Season with salt and pepper.

Finish & Serve
4
  • Add drained spaghetti to pan with sauce; toss to coat. (TIP: If needed, stir in more reserved pasta cooking water a splash at a time until pasta is thoroughly coated in sauce.) Taste and season with additional salt and pepper if necessary.

  • Divide pasta between plates or shallow bowls. Sprinkle with remaining Parmesan and serve.

Review summary

Updated on Sep 2026
  • Flavor: The rich, creamy tomato sauce is a highlight, though some found the overall dish mild; adding red chili flakes gave it a welcome kick 🌶️. A few felt the cream cheese and sour cream overshadowed the Tuscan spice — use slightly less dairy if you prefer a bolder tomato flavor.
  • Ease of prep: Quick and straightforward to make, with most steps coming together in under 30 minutes.
  • Suggestions: Add red chili flakes for more heat, or sauté extra vegetables like mushrooms or onion to boost depth and balance the generous amount of turkey. Some preferred a longer simmer to let the turkey cook through fully and avoid dryness.
  • Leftovers: This recipe makes a generous amount — many reviewers had enough for lunch the next day, though a few noted leftovers don't reheat as well.
  • Portions: The turkey-to-pasta ratio skews heavy on meat; consider adding a bit more spaghetti to balance the dish if you find the sauce exceeds the noodles.

This meal was absolutely delicious! Loved the portion size as well! Made it feel more worth the value. Only callout is that the sauce exceeded the pasta. Would love slightly more pasta to use on the sauce and meat. One of our favs!

Delicious, love how the zucchini was prepared, as I do not care much for it. My husband likes it, but the way it was prepared was perfect for the both of us. Turkey dried out, but I think that was my fault.

I loved getting to make the sauce. It was nice not just throwing a jar of sauce on some noodles.

Delicious and very fun to make! Even with 2 servings, we had enough for lunches for both me and my husband.

Was pretty good, liked the extra meat but the turkey was pretty dry, would have been better with beef. Also, could have used more creaminess with some more sour cream and cream cheese.

First off, I didn't realize that this recipe was 4 servings. I thought that it was 2 because that's what I ordered. The turkey was very lean and the Tuscan seasoning ruined it for me. Ez prep, which I really appreciated. But I won't order this again.
