Cooking Steps

Roast Potatoes

Wash and dry all produce. Preheat oven to 425 degrees. Cut sweet potatoes into ½-inch cubes. Toss on a baking sheet with a drizzle of olive oil and a pinch of salt and pepper. Roast in oven until tender and crisped, 20-25 minutes.

Halve, peel, and mince shallot. Strip enough and chop enough rosemary leaves from stems to give you 1 tsp. Halve lemon.

Cook Chicken

Heat a drizzle of olive oil in a large pan over medium-high heat. Pat chicken dry with a paper towel and season all over with salt and pepper. Cook in pan until no longer pink in center, 5-7 minutes per side. Remove from pan and set aside to rest.

Make Sauce

Lower heat under pan to medium. Add shallot, chopped rosemary, and a drizzle of olive oil. Cook, tossing, until softened, 2-3 minutes. Stir in Colavita balsamic vinegar and half the fig jam (use the rest as you like). Simmer until syrupy, about 1 minute. Stir in ½ cup water and stock concentrate. Let reduce until saucy, about 3 minutes. Remove from heat. Stir in 1 TBSP butter. Season with salt and pepper.

Toss Salad

Toss lettuce with a squeeze of lemon and a drizzle of olive oil in a medium bowl. Season with salt and pepper.

Finish and Serve

This balsamic fig chicken meal was awesome. Absolutely loved the sauce. Spouse as I was cooking it: "Wow, what is that amazing smell?" My only critique is that the mixed greens needed a little help, so we added sliced cherry tomatoes from our hydroponic garden, a light sprinkle of shredded parmesan, and some honey dijon dressing left over from a previous meal. Also, we always parboil the potatoes before roasting them now. Makes a big difference in the end result.

The potatoes cooked up perfectly crisp on the outside and tender & fluffy on the inside. The balsamic fig topping on the chicken was very tasty! I liked the spring mix that came with it as a side, but my bag consisted of entirely green greens? I had no purple leaved greens in my mixed greens bag. Not sure why that was...maybe its just the early growing season doesn't produce purple greens yet? I didnt feel like i had a "mix" of field greens and it was just spinach leaves and some other green greens.

Delicious! We really enjoyed this dish. The balsamic fig sauce really brought this chicken dish to life! It was superb. I felt like I created such a fancy dish. I also sprinkled my own mixed seasoning blend on the potatoes for an extra touch.

Delicious! medium high heat skillet to cook the chicken was a little too high, cased some smoky rooms :) So much food so we split it 3 ways with our son and he LOVED the balsamic fig drizzle! I was a big fan of the lemon/oil tossed mixed greens. Very simple and light meal.

This was a good beginner recipe...very easy to follow and almost error proof. End result looked very professional and very tasty. Mixed greens with lemon and light seasoning was surprisingly good. Fig sauce great way to spice up chicken.

Fantastic! The fig & balsamic reduction was delicious. I did season the potatoes with garlic and wine seasoning and a cracked pepper medley. Greens and vegetables were still fresh even though we just cooked it on a monday and we got it the prior tuesday.

Chicken and balsamic fig sauce was great, as well as the mixed green salad. I added avocado and scallions to the salad. I would have preferred something other than roasted white potatoes with the fig chicken. Maybe even sweet potatoes or rice pilaf?

We were a bit Leary about this recipe at first but this was the most amazing chicken! The balsamic fig sauce was so incredible!
