• Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. • Peel, trim, and halve carrots lengthwise; cut on a diagonal into 1⁄2-inch pieces. Peel and mince garlic. Halve, peel, and thinly slice onion. Remove and discard any large stems from kale; chop into bite-size pieces. Trim and thinly slice scallions, separating whites from greens.

Roast Carrots & Toast Panko

• Toss carrots on a baking sheet with a drizzle of olive oil, salt, and pepper. Roast on top rack until golden and tender, 20-25 minutes. • Melt 1 TBSP butter (2 TBSP for 4 servings) in a large pan over medium-high heat. Add panko and garlic; cook, stirring, until golden brown, 2-4 minutes. • Turn off heat; season panko with salt and pepper. Transfer to a plate and set aside. Wipe out pan.

• Heat a drizzle of olive oil in same pan over medium heat. Add onion and cook, stirring occasionally, until slightly softened, 3-4 minutes. • Add kale, 1⁄4 cup water, and a pinch of salt and pepper. Cook, stirring occasionally, until kale is wilted and tender, 5-7 minutes. • Remove from heat. Taste and season with salt and pepper if desired. Transfer to a large bowl and cover with foil. Wash out pan.

Cook Pork

• While veggies cook, pat pork dry with paper towels; season all over with Frank’s Seasoning, salt, and pepper. • Heat a drizzle of oil in a second large pan over medium-high heat. Add pork and cook until browned and cooked through, 4-6 minutes per side. Transfer to a cutting board to rest.

Simply cook through this step, swapping in chicken for pork.

Make Sauce

• Heat a drizzle of oil in pan used for kale over medium-low heat. Add scallion whites and cook, stirring occasionally, until softened and fragrant, 2-3 minutes. • Add 1⁄4 cup water, hot sauce, honey, and stock concentrate. Cook, stirring often, until thickened, 1-3 minutes. • Remove from heat; stir in sour cream and 1 TBSP butter (2 TBSP for 4 servings) until melted and combined. Taste and season with salt and pepper.

Finish & Serve

• When carrots are done roasting, add to bowl with kale; toss to combine. Taste and season with salt and pepper if desired. • Divide pork and kale jumble between plates. Spoon sauce over pork; sprinkle kale jumble with as much garlicky panko as you like. Garnish pork with scallion greens and serve.

This was one of my new favorites. Really great, balances macro nutrients but tasted fantastic. The creamy buffalo sauce flavor from the sour cream and butter mixed with Franks seasoning was incredible. Will definitely re-order.

Wow the sauce is so good. I only have 1 working pan, but managed to make it work. The chicken was pretty thick so had to cook it longer than 6 minutes a side. It was pretty messy and a lot of cleanup, but better than I was anticipating.

The sauce was tremendous! We subbed chicken cutlets for the pork and it was dynamite. Tangy seasoning with a little "kick" but not spicy on the tongue. My wife does not like spicy/hot food but really enjoyed this meal

I was hesitant about this one bc having just kale as the side is always a gamble but the flavors were off the charts. Would definitely order again. I need to remember that even the healthier choices always deliver and to order the lower caloric meals!

Both my husband and I truly hate kale,so I wish I could have substituted it for something else... BUT the rest of the meal was delicious. I topped the pork with the toasted panko that was meant for the salad (holy cow, delicious) and served the carrots alone. The pork seasoning and sauce were outstanding. My favorite meal this week, even if we didn't have a green veggie to go with it. Heck, I'm almost glad I couldn't substitute the kale salad because the panko on the pork was SO good. My only suggestion for Hello Fresh would be to offer this meal with everything (including the panko and carrots) except the kale. Swap it out for roasted green beans or asparagus maybe? As far as I know, kale is a fairly popular diet food, but very few people actually like it.

The kale was great, but I didn't add the carrots...didn't feel like turning on the oven for that and waiting half hour. But the panko mix on top made the kale the bomb. Ok, so with the chicken sauce, yep no! It didn't come out anywhere near the nice orange color in the pic and it tasted kind of burnt from picking up the bottom of the pan. Just a no, wouldn't get again, but do the kale with another meal.

The chicken was a little under seasoned so if we ever make this again, we would definitely use more of the spice. Wish it had called to marinate it. The sauce for it was good, but I found myself trying to drench each bite in it. The side was better than the chicken, very tasty.
