Adjust rack to top position and preheat oven to 450 degrees. Wash and dry produce.
Cut broccoli into bite-size pieces, if neccessary.
In a small bowl, combine panko breadcrumbs and a drizzle of oil (for 4 a large drizzle of oil). Set aside until ready to use.
In oven ready baking tray, toss broccoli with a large drizzle of oil, half the fry seasoning, salt, and pepper (for 4 divide ingredients between two trays).
Add broccoli to oven and bake on top rack until broccoli is tender, 15-18 minutes.
In second oven ready baking tray, combine cream cheese, cream sauce base, cheddar cheese, monteray jack cheese, and half the fry seasoning (for 4 divide between two trays).
Break up chicken in pack and drain any excess liquid.
Add chicken to tray and spread into even layer and top with panko breacrumbs. (Tip: use a spoon or rubber spatula to break up chicken into 1/4-inch pieces if neccessary)
Add oven ready tray with chicken to oven and bake on top rack until filling is hot and bubbling, 10-12 minutes.
Set oven to broil on high and broil until panko is golden brown, 2-3 minutes.
While chicken is broiling, massage grain blend in package to break up grains; partially open package. Microwave until warmed through, 1 1/2 - 2 minutes.
Divide grain blend and broccoli between plates in separate sections. Serve chicken bake half on and half off grain blend. (Tip: eat everything together for the perfect bite!)
