• Wash and dry produce.
• Trim and thinly slice half the scallions (all for 4 servings). Slice tomato into ¼-inch-thick rounds.
• Crack each egg* into a separate small microwave-safe bowl. Divide sliced scallions between bowls; gently pierce yolks with a fork, then stir once (yolks will be broken, but not fully blended). Cover bowls with plastic wrap and microwave until eggs are cooked through, 1-2 minutes. Immediately uncover bowls and top eggs with Mexican cheese blend; set aside until ready to serve. (TIP: We were able to fit two bowls in the microwave at the same time. Check eggs after 1 minute; if needed, continue to microwave in 30-second intervals until done.) (For 4 servings, work in batches; transfer cooked eggs to a plate and reuse bowls.)
• While eggs cook, halve and toast buns.
• In a third small bowl, combine mayonnaise with as much hot sauce as you like.
• Spread top buns with guacamole. Spread bottom buns with spicy mayo. Fill buns with cheesy eggs, tomato, and a few tortilla chips.
• Divide sandwiches between plates and serve with remaining tortilla chips on the side.

Hands down the best breakfast we've gotten since starting with HelloFresh. Please offer it again soon! It was interesting to see how well the eggs came out cooked in the microwave - and I by pure luck chose to use a pyrex microwaveable 'bowl' to cook them in which resulted in the perfect size for the egg when cooked - almost the exact same size as the bun but slightly smaller. The combination of chips, guacamole, and spicy mustard was excellent. However, we did have to supplement with our hot sauce as that packet was missing from what was sent.
These breakfast/lunch sandwiches were amazing. Who knew we could cook an egg in the microwave? Buns were soft, chips were crunchy and the guacamole had just the right touch of spice for us. The tomato was a little sad out of the box but ended up tasting fine on the sandwich.
The guacamole was a little thin between the two sandwiches. Also the eggs "pop" after 30sec in the microwave, and cause a mess flipping the bowl over. If the egg was combined more like a scramble, it would've helped. Great taste and liked the corn chips on there for texture.
This was pretty good! The brioche was basically a hawaiian role in bun form, but I liked it. The chips are silly. I just ate them instead of putting them on the sandwich. I also used avocado slices instead of the guac - it tastes weird. The eggs were super easy, but in my microwave 1 minute was way too much. 30-40 seconds was all it needed. I would eat this again - I wish it were offered every week. The free breakfast options are often lacking.
Great veggie sandwich. Actually ate it for lunch, but I can imagine it also working out perfectly for breakfast. Loved the combination of the flavors and how easy it was to prepare. Learned a great trick with the egg in the microwave!

It was a great option to your regular breakfast sandwich! I switched it up by adding the scallions and cheese to the egg and cooked it as scrambled. The tomato was unusable due to being bruised and rotten already. Otherwise, the sandwich had great flavor!
This was very messy to prepare and to eat. The mayo was not necessary. The guacamole was saucy enough for the sandwich and the hot sauce could be either added to the guacamole or sprinkled directly on the egg. A slice of cheese would have worked better than the shredded cheese that was provided. The chips were better on the side rather than in the sandwich.
Yummy, quick and easy! Creamy and cheesy with just the right amount of spice since we can adjust the amount of hot sauce! Great Sunday morning breakfast!
