
Rain or shine, warm or cool weather, it’s tough not to crave a big bowl of soup. Tonight’s soup is chock-full of Italian spiced chicken sausage, chunks of sweet potato, and tender kale. And because no good brothy bowl is complete without bread for dunking, we’re also throwing in buttery, herby toast points. Get ready for a meal that is as satisfying as it is delicious.

• Adjust rack to top position and preheat oven to 425 degrees. (TIP: If you have a toaster oven, feel free to skip preheating.) In a small microwave-safe bowl, place 2 TBSP butter (4 TBSP for 4 servings) and a pinch of Italian Seasoning (you’ll use more later); bring to room temperature. Wash and dry produce. • Halve, peel, and finely dice onion. Peel and dice sweet potato into 1⁄2-inch pieces. Remove and discard any large stems from kale.

• Heat a large drizzle of olive oil in a large pot over medium-high heat. Add onion and cook, stirring occasionally, until softened, 4-5 minutes. • Add sausage* and cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes.

• Stir sweet potato, stock concentrates, 1 tsp Italian Seasoning (2 tsp for 4 servings), 21⁄2 cups water (5 cups for 4), and a big pinch of salt into pot. (Save the rest of the Italian Seasoning for another use.) Cover and bring to a boil, then reduce heat to medium and simmer for 7 minutes.

• Once soup has simmered for 7 minutes, uncover pot and stir in kale. Simmer, uncovered, until kale is wilted and sweet potato is tender, 5-7 minutes more. Season generously with salt and pepper. TIP: Prefer a brothier soup? Add another 1⁄4-1⁄2 cup water and an extra pinch of salt.

• Meanwhile, mix softened butter and Italian Seasoning until thoroughly combined. Season with salt. TIP: If butter is not yet softened, microwave for 5-10 seconds. • Halve baguette lengthwise; spread herb butter onto cut sides. Toast, cut sides up, on top rack (or in a toaster oven) until golden, 3-5 minutes. • Halve each baguette piece on a diagonal.

• Divide soup between bowls and top with Parmesan. Serve with toasts on the side.
Chicken Sausage is fully cooked when internal temperature reaches 165º.
I wish I could give more than 4 stars. This is my favorite meal so far. It was so easy and quick to make. The chicken sausage has an amazing flavor with the sweet potato and kale. I also love that this soup is so healthy. I will be looking for more soups similar to this one!
I'm someone who goes through phases where I eat a LOT of soup. This meal is definitely going into my repertoire for the next time that happens. I loved the fact that it included sweet potatoes and kale so I could eat a good amount of veggies (I was particularly craving something veggie-filled the day I had this) and the chicken sausage was outstanding. To whoever thought of including cheese... you're a genius! I thought it paired well with the meat and the vegetables. Oh! I can't forget the toast points. I liked that the recipe called for cutting the points in half because I had one to dip into my soup and another one to eat on its own.
This was surprisingly good. My husband, who doesn't think he likes kale, enjoyed it in this soup. I was impressed with the flavor of the chicken sausage and how it complimented the sweet potatoes. This one's a keeper.
This is a tasty tasty dish. Super fast to prep. I added an extra 1/2 sweet potato as the one in the ingredients bag was rather tiny. Chicken sausage is well seasoned and gives this dish the right "kick". Italian seasoned toast is a perfect accompaniment.
So delicious and satisfying. I'm not a huge fan of kale but wasn't mad at how it cooked up in this soup. The chicken sausage was flavorful, the broth was hearty (although it needed more broth). I didn't think I would like this recipe as much as I did!
This soup was PACKED full of flavor. I have not been a fan of chicken sausage in the past, but this was a great way to incorporate a healthier option. Soooooo good!

It wasn't as "soupy" as we expected it to be, but the flavors were tasty, and the herb butter toast was fantastic!
Loved this soup and the herb butter toast. Perfect portions. Produce provided was not fresh. Sweet potato had black spots and kale was dry, wilted and grey colored. Had to pick thru it, ended up tossing out 1/3 of it before cooking soup. The chicken sausage is good.
