The best place for these fried chickpea and feta fritters is…nestled into lettuce leaves! (If you answered “in your mouth,” that’s also correct). You’ll sizzle up those savory fritters and load them into baby lettuce leaves along with tomato cucumber salad, tangy yogurt sauce, and chopped parsley for a tantalizing vegetarian meal that pops with fresh flavors.

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

Prep
1

• Wash and dry produce. • Dice tomato into 1⁄4-inch pieces. Halve cucumber lengthwise; slice into 1⁄4-inch-thick half-moons. Halve, peel, and mince shallot. Zest and quarter lemon. Finely chop parsley. Drain and rinse half the chickpeas (all for 4 servings); pat dry with paper towels. Trim and discard root end from lettuce; separate leaves.

Make Salad
2

• In a medium bowl, combine tomato, cucumber, 1 tsp shallot (2 tsp for 4 servings), and Greek vinaigrette. Season with a pinch of salt and pepper.

Make Sauce & Mash Chickpeas
3

• In a second medium bowl, combine yogurt, sour cream, lemon zest, 1 tsp parsley, and juice from one lemon wedge (2 tsp parsley and juice from two lemon wedges for 4 servings). Add water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt and pepper to taste. • Place chickpeas in a large bowl and mash with a potato masher or fork until almost smooth. TIP: It’s OK if there are some larger pieces.

Make Batter
4

• To bowl with chickpeas, add oregano, garlic powder, half the tempura batter mix, half the feta, half the remaining parsley, remaining shallot, 1/3 cup water, and 1⁄4 tsp salt (all the tempura batter mix, 2/3 cup water, and 1⁄2 tsp salt for 4 servings). • Whisk batter to combine. TIP: If mixture seems too thick, add more water 1 tsp at a time until it reaches a pancake- batter-like consistency.

Cook Fritters
5

• Heat a 1/3-inch layer of oil in a large pan over medium-high heat. Once oil is hot enough that a drop of batter sizzles when added to the pan, using a measuring cup, carefully add 1⁄4-cup scoops of batter. Use the bottom of the measuring cup to flatten into fritters. (TIP: You may need to cook fritters in batches.) • Cook until golden brown on bottom and bubbles evenly appear on top, 3-4 minutes. Flip fritters and cook 1-2 minutes more. • Using a slotted spoon, transfer to a paper-towel-lined plate. Season with salt.

Finish & Serve
6

• Transfer fritters to a cutting board; cut in half. • Divide lettuce leaves between plates. Fill each with two fritter halves, salad, and remaining feta. Drizzle with lemon yogurt sauce. Garnish with remaining parsley and serve with remaining lemon wedges on the side.

Review summary

Updated on Feb 2026
  • Flavor: Many loved the fresh, flavorful combination of crispy fritters and zesty salad. Some found it bland; consider adding extra herbs or spices 🌿.
  • Ease of prep: Prep was more time-consuming than expected, with multiple steps and dishes. Some struggled with frying; consider lower heat or smaller fritters.
  • Suggestions: Try air frying for less oil, or serve as a salad instead of wraps. Add cilantro, dill, or cumin to boost flavor.
  • Leftovers: Fritter batter keeps well overnight; try serving leftovers on toast with arugula for a tasty next-day meal.
  • Texture: Fritters can be tricky to hold together; ensure oil is hot enough and consider adding more tempura mix if needed.

Fantastic new recipe!! The prep and getting ready was kind of slow going but I like that so much of it is not "cooking" but preparing and mixing. Wonderful flavors, great combinations, delicious, and filling. These fritters were simple to make but pack a huge punch. Love them with the lettuce wraps but they could easily be stuffed into a pita too. Keep this one around!!

This meal is so delicious and easy to make. I love chickpeas on their own but I've never made fritters before. Love the flavor combination and an easy go to meal if you're in a rush.

We actually bragged about this recipe to our whole family! It was light but very filling! We kept going back for seconds! The chickpeas turned into patties was brilliant and the dressing had a yummy kick of lime that had us licking our fingers and our plates

This was my favorite meal so far. I doctored it a lot, but HF gave me the ideas. I added chopped cilantro and dill to the chickpea patties and yogurt sauce. I also added cumin to the patties batter. Frying instructions were spot on . I love this recipe!

The flavor of this recipe was very good. The lettuce that we received was a little narrow to make wraps, but we just ate it as a salad. Unfortunately, the fritters did not hold together as the receipe was written. The batter was way too wet. We needed to add a significant amount of flour in order to make fritters that held together.

Once I figured out exactly the best way to make the fritters, this meal was fantastic! I actually didn't eat them as lettuce wraps, but made a salad to go with the fritters. It was SO GOOD!

When I was making this meal I had serious doubts it was going to turn out but it was one of the best meals I've ever made. The only thing is it required a lot of dishes and clean up, but it was a great meal!

This was delicious! I don't really like chickpeas , but wanted to see if this recipe would encourage me to add them to my diet. Don't know if I would order it again because it made more of a mess than other recipes.
