• Wash and dry produce (except green beans). • Peel and dice sweet potatoes into ½-inch pieces. Zest and quarter lemon.

• Place sweet potatoes in a medium pot with enough salted water to cover by 2 inches. Cover, bring to a boil, and cook until tender, 15-20 minutes. • Drain and return sweet potatoes to pot. Add sour cream and ½ TBSP butter (1 TBSP for 4 servings); mash until smooth. Season with salt and pepper. • Keep covered off heat until ready to serve.

• While sweet potatoes cook, place 2 TBSP butter (4 TBSP for 4 servings) in a small microwave-safe bowl; microwave until softened, 10-15 seconds. • Stir in honey and a pinch of salt.

• Pat pork* dry with paper towels. Season lightly with salt and pepper, then rub all over with BBQ Seasoning. • Heat a drizzle of oil in a large pan over medium-high heat. Add pork and cook until browned and cooked through, 4-6 minutes per side.

• While pork cooks, pierce green bean bag with a fork; place bag on a plate. Microwave until tender, 1-2 minutes. TIP: No microwave? No problem! Steam green beans in a small pot with a splash of water until just tender, 5-7 minutes. • Carefully transfer green beans to a medium bowl and toss with lemon zest, ½ TBSP butter, a squeeze of lemon juice, and a big pinch of salt and pepper.

• Divide mashed sweet potatoes and green beans between plates. Top mashed sweet potatoes with pork. Dollop pork with honey butter and sprinkle with chili flakes if desired. • Serve with remaining lemon wedges on the side.
Pork is fully cooked when internal temperature reaches 145º.
Honestly might be my favorite one yet. The sweet potato mash was sweet and salty, the rub and honey butter on the pork was outstanding and the green beans were so fresh. Loved the red pepper flakes to break up some of the sweetness on the plate!
I loved the BBQ pork chop flavor and the honey butter was a great addition. I'd love to make it for other meals. The mashed sweet potatoes were delicious and easy to make. The green beans were tasty, but the recipe calls for microwaving them which didn't really cook them enough. I prefer to sauté green beans for a bit longer so they are more pleasant to eat.
This was fantastic! Loved the bbq spice on the pork chop and then the honey butter sent it over the top! The lemony buttery green beans added another note of bright acidic flavor to cut through the richness of the pork and sweet potatoes. Perfect! We will definitely get this one again.
The honey butter with the smokey bbq seasoning for the pork chops were just chef's kiss amazing!! I didn't mash the sweet potatoes, i actually did slices and baked them in butter in the oven so I can't give an assessment on the recipe provided. The green beans were just okay.
Loved this meal! The barbecue flavored pork chops were wonderful! I appreciated the easy cooking of the green beans as well. We found, however, that the honey butter sauce was better on the sweet potatoes than on the pork. The sweet potatoes on their own were not sweet at all.
I've never thought of putting lemon juice on green beans but I will definitely be doing this again. And the honey butter sauce on the pork chop was great. I wanted to add brown sugar to the sweet potatoes but since I'm trying to lose weight I decided to follow the recipe.
This was our favorite for the week of meals we received. The pork chop rub topped with the honey butter I will definitely be making again! I also found the sweet potato mixture with sour cream and chili flakes a nice change, and it's not something I would have imagined to mix together on my own! I was not fond of the green beans as the cook time recommended left them rubbery. I will likely roast them next time with the butter and lemon and skip the steaming. Wonderful meal!
We REALLY liked this recipe. The seasoning for the pork paired with the mild sweetness of the honey butter was -- *chef's kiss* -- perfection! We didn't use the chili flakes on the green beans -- they were great with just the lemon zest and juice. Simple, but delicious.
My only complaint with this dish was the green beans. They were sour from the lemon. I wasnt a huge fan of the lemon flavor but that's no fault of Hello Fresh. However, since these were to be prepared in the microwave by steaming, there was no removing the stems which was a little off putting. The mashed sweet potatoes were to die for, as well as the honey butter for the pork chop.
Wonderful! The potatoes were excellent, especially with the honey butter drizzled on them. Liked the seasoning used for the pork chops. Green beans were not the freshest, but tasty with the lemon zest.
