If you were to ask us, the pita is the ultimate pocket: you can stuff just about anything in it and if it overflows that means you stuffed it right. These pita pockets are just one prime example. You’ll fill pita with a fresh cucumber and tomato salad, swipe of hummus, creamy and tangy dill dressing, feta, and as much hot sauce as your taste buds desire. When you’re ready to eat, don’t let any dripping sauce or salad go to waste—those are what your fingers are for!

Trim and quarter cucumber lengthwise; slice crosswise into ½-inch-thick pieces. Halve tomatoes. Pick and roughly chop fronds from dill. Halve lemon. Halve pitas.
In a medium bowl, toss together cucumber, tomatoes, pepitas, half the dill, a large drizzle of olive oil, and a squeeze of lemon juice to taste. Season generously with salt and pepper.
In a small bowl, combine sour cream, remaining dill, and a squeeze of lemon juice to taste. Season with salt and pepper.
Toast pita halves until warm. Fill each pita pocket with a bit of hummus, veggie salad, dill sauce, feta, and hot sauce to taste.
I absolutely loved this meal. The creamy dill sauce was delicious and the ingredient pairings were great. My husband and I loved the softness of the pita against the crunch of the cucumbers. I did add my own sliced chicken to the dish because I didn't think my husband would like an all vegetarian sandwich. The hummus didn't really come through with all the other stuff in the sandwich. I will definitely be ordering this again when it comes around.
Fresh and tasty. Everything arrived very nice and cold. We were able to enjoy these. Although I did take it apart and make it slightly different. I followed the recipe for what was in the pita pocket and then had it as a salad. I cut up the pita pockets themselves and air fry them, which was really nice to have with the hummus. All in one meal.
We really enjoyed these pita pockets! The dill sauce offsets the feta cheese nicely, and the cucumbers add a nice crunch. The portions were just right. We will definitely be having this one again.
This ended up being two lunches in one. I used the hummus, some feta and some cucumber slices in the pita. Then I cubed the cucumber as well with the tomato halves and the rest of the feta to make a salad. Great deal
There was no need for so much hummus. The cream and the oily dill sauce was enough and the stars. My pitas fell apart due to all the liquid and too much filling. There was also way too much to fit it all in the pitas so I had extra leftover. It was DIVINE as a salad and I wished I had more pita for the leftovers. I would recommend cutting the hummus or only send one container not two. And maybe half the feta or half the cucumbers or send more pita. It just wasn't like the other meals where it all was the right amount for two servings
This is an easy different recipe. I cut the cucumber in much smaller pieces as it fares better in the small pita opening, also because of the thick skin on this type of cucumber which is rather bitter, smaller pieces taste better. A better choice would be the Persian cucumber. I also toasted the pita's in the oven on broil and this adds a dimension to this recipe that improves it.
So fresh and yummy! I actually mixed all the feta and dill sauce into the cucumber salad rather than spooning it in separately, which was much easier, but, otherwise, just followed the recipe.
This is a great lunch or light dinner. I would make it again with red pepper hummus or baba ghanoush instead of plain hummus. The only problem is that the cucumber was huge compared to the tomatoes. The ratio was off.
I loved this! So easy and so much flavor. The dill sauce and hummus were paired perfectly with the veggies & feta.
I loved the taste of hummus with the cucumber salad. It was so refreshing especially during summer.
