
Spiked with aromatic basil, these mini meatloaves are what happens when an American classic spends a semester abroad in Rome. Their piccolo size doesn’t just make them adorable; it allows them to cook quickly, too. Even the mashed potatoes on the side, fragrant with garlic, sneak in a little European flair.

• Adjust rack to middle position and preheat oven to 400 degrees. Wash and dry all produce. • Halve, peel, and mince shallot. Peel and mince garlic. Strip thyme leaves from stems; finely chop leaves until you have 1½ tsp (2 tsp for 4 servings). • In a medium bowl, soak bread with stock concentrate and 3 TBSP milk (½ cup for 4). (You’ll use more milk later.) Break mixture up with your hands until pasty.

• Add beef*, shallot, chopped thyme, garlic, salt (we used ½ tsp), and pepper to bowl with bread mixture. (Use 1 tsp salt for 4 servings.) Mix to combine, then form into two 1-inch-tall loaves (four loaves for 4). Place on a lightly oiled baking sheet. • Bake on middle rack until browned and cooked through, 20-25 minutes total (you’ll add more to the sheet after 10 minutes).

• While meatloaves bake, dice potatoes into ½-inch pieces. • Place in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until potatoes are very tender, 15-20 minutes. • Drain and return potatoes to pot; set aside.

• While potatoes cook, in a second medium bowl, toss green beans with a drizzle of olive oil and a pinch of salt and pepper. • Once meatloaves have baked 10 minutes, remove from oven and carefully add green beans to same sheet. • Return to middle rack until green beans are tender and meatloaves are cooked through, 10-15 minutes more.

• Mash drained potatoes with sour cream and ¼ cup remaining milk (be sure to measure) until smooth. Season generously with salt and pepper. TIP: If needed, add more milk a splash at a time until potatoes are creamy. For extra-rich mashed potatoes, add 1 TBSP butter (2 TBSP for 4 servings).

• Divide potatoes, green beans, and meatloaves between plates. Serve.
My meatloaf in the past has never had enough flavor. The Italian flare to this recipe was fantastic. We also love the fresh green beans. I do add a little bit of cream cheese to the mashed potatoes, which adds an extra special creaminess and flavor. We will definitely do this meal again.
I'm not typically a huge meatloaf fan, but this recipe was fantastic! If you toss the green beans in olive oil before cooking, they get a little greasy when cooked on the meatloaf pan, but the flavor was excellent. Mashed potatoes were great. We substituted the sour cream for butter.
The meatloaf and mashed potatoes were good and flavorful. It was a nice and filling dish. The green beans were ok - I wish they had "something" to them like bacon or some sort of seasoning.
The timing for the green beans was off or maybe they went bad but they came out rubbery and not all the way cooked. Also the prep and cook time are a bit misleading but otherwise it was pretty good. You guys should really consider adding gravy, ketchup and/or worcestershire as the meatloaf/mashed potatoes was missing a sauce and any of these would really elevate this meal. I added ketchup and worcestershire to my leftovers but you guys should at least send something to make gravy with. Overall, it came out pretty good and tasty.
Perhaps some of the best meatloaves I have ever made! The flavor was something I hope to replicate again....and what is meatloaf without mashed potatoes! The roasted green beans rounded it all out.

Meatloaf was good! I think it baked too long or something, but I did the minimum time and it was a little dry but very flavorful. I added parmesan cheese and garlic salt to the green beans and they tasted amazing (I've tried a previous HF recipe for green beans and wasn't a huge fan). I think I may have messed up on the potatoes because I couldn't get them to mash smooth like I have before. But overall, it was a great meal and I would try it again!
We really liked this meal and will order it again. The meatloaf was flavorful and filling, the mashed potatoes seemed creamier, and we did our green beans al dente. Very good.
This sounded so basic but it turned out wonderful. I love getting Hello Fresh because i can try different flavors i normally wouldnt. I make meatloaf mashed potatoes ans green beans often but i enjoyed this a lot (the fresh Thyme for sure) And no left overs! As i cook i put my trash in the bag provided by the end im 95% cleaned up. And it was super filling!
This was an easy and delicious meal. The green beans were especially good after absorbing a little of the juices from the meatloaves.
