You’ll roll up a creamy, cheesy homemade spinach and hummus filling in flour tortillas, then sizzle them in a hot pan until crispy. Serve the roll-ups with juicy apple slices, crisp carrot sticks, blue corn tortilla chips, and a buttermilk ranch dipper. The kicker? You’ll spend less time shopping, planning, and cooking for your family, and more time hanging out with them! ***This recipe is designed to provide lunch for multiple days. • Wash and dry produce. • Roughly chop spinach. • Heat a drizzle of olive oil in a large, preferably nonstick, pan over medium-high heat. Add spinach and cook, stirring occasionally, until wilted, 3-4 minutes. • Add cream cheese and cook, stirring, until cream cheese is melted. Season with salt and pepper. Remove from heat. • Stir in hummus and mozzarella until combined. Transfer to a medium bowl. Wipe out pan.

• Trim, peel, and cut carrot into sticks (like fries; ours were 3 inches long and 1⁄3 inch thick). Halve, core, and thinly slice apple.

• Wrap tortillas in damp paper towels; microwave until warm and pliable, 30 seconds. • On a work surface, divide cheesy spinach filling between bottom two-thirds of each tortilla. Roll up tortillas, starting with filled sides, to create roll-ups. • Heat a drizzle of olive oil in pan used for filling over medium-high heat. Add roll-ups, seam sides down. Cook until lightly toasted, 1-2 minutes per side.

• To serve: Halve roll-ups on a diagonal; divide between plates. Serve with ranch dipper, carrot sticks, apple slices, and tortilla chips on the side. • To stash: Let roll-ups cool completely. Refrigerate roll-ups, ranch dipper, carrot sticks, and apple slices in separate containers. Pack as desired!
The cheesy spinach roll ups were so good! Great flavor and I liked that you cooked the roll ups at the end. Nice to have some veggies and fruits on the side to pull it together
This was a really good little roll up. I was unsure of the hummus mixed in with the spinach dip, but it was delicious. Would be 4 stars, but the chips didn't really bring much to the dish. Plain tortilla might have been better. Or pita chips would be even better.
My son is very picky so I was skeptical that he wouldn't eat the meal because of the spinach. However I was pleasantly surprised! He loved it and dipping it in the ranch made it fun for him. Will definitely get again!
AMAZING!! Who wouldn't love a rich, creamy, flavorful spinach dip wrapped in a crisp tortilla! Plus, the carrots, apples, and blue corn tortilla chips really round out the meal! I would definitely get this again! Yum!

These are tasty but they need a salty punch and a bit more cream cheese. I have ordered these again but I plan to add another 3 tbsp or so of cream cheese and some shredded parmesan to the filling. Not enough apple or chips to split across 3 lunches but enough for 2.
I never would have thought to add hummus and mozzarella into a cream cheese spinach mix. Yum! Also, I went rogue and added paprika along with the salt and pepper and it was really great!
Our boys take a cold lunch everyday to school and with this they made it themselves. It was so great to prepare with the kids and it made it even more exciting to take for their lunch because they helped prepare this meal.
We enjoyed them. They were so good. I added chicken to 2 for me but gave the other 4 to my 3 year old.. she loved them. And she is picky
