Cooking Steps

1

Halve, peel, and thinly slice onions.

2

Heat a large drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add onions; cook, stirring occasionally, until browned and softened, 8-10 minutes. Stir in 2 tsp sugar, stock concentrates, and ¼ cup water. Cook, stirring, until onions are jammy and water is absorbed, 2-3 minutes more. Remove pan from heat and stir in half the garlic herb butter until melted; season with salt and pepper. Transfer onions to a small bowl. Wipe out pan.

3

Spread half the sourdough slices with remaining garlic herb butter. Evenly top buttered slices with gouda and onions, then top with remaining slices to make sandwiches.

4

Heat 1 TBSP butter in a large pan over medium heat. Add sandwiches; cook until bread is golden and cheese melts, 4-6 minutes per side. (Work in batches if necessary).

5

Cut in half on a diagonal and serve.

Customer reviews

Review summary

Updated on Apr 2026
  • Flavor: Customers rave about the French onion soup taste in sandwich form, though some found it too sweet with the added sugar or overpowered by strong onion flavor.
  • Ease of prep: Most found it surprisingly easy and quick to make, though some felt caramelizing onions was more work than expected for a grilled cheese.
  • Suggestions: Many recommend adding extra cheese since portions feel skimpy; some suggest skipping the sugar, adding bacon or ham, or pairing with tomato soup.
  • Portions: Generous sandwich size that many found filling for lunch, though several wished for more cheese to match the large sourdough bread.
  • Cheese ratio: The thin Gouda slices often didn't cover the bread well; customers frequently added their own cheese for better coverage and meltiness.
