Garam Masala Coconut Chicken
Serves 2 | with fire-braised chicken thighs, coconut, Garam Masala, and golden raisin cashew rice
We’ve done all the hard work to bring you this flavor-packed meal in a hurry! This dish, inspired by mild Indian korma, combines tender chicken thighs, aromatic spices, and a creamy coconut sauce into a better-than-takeout dinner. And because no curry-style meal is complete without rice, there’s plenty of turmeric-spiced basmati, studded with crunchy cashews and sweet golden raisins, to soak up all the saucy goodness.

Delicious! Photo makes it look like the rice to chicken ratio is 50/50, but there was less chicken than that. Regardless, it was a satisfying meal for two.

Tasty. Like the pre-made option for nights too busy to cook.

The sauce was too "vinegary"? Something was off, it was almost sweet & sour which was not great. Also the pan needs to have a 2-compartment divider so the chicken can be sauced separately from the rice-cashews. It was a whole jumble with the single compartment. Basically I only had one serving and disposed of rest, it just wasn't great.

LOVE THIS!! The layers of flavor in this curry are divine. And the rice... cooks up so nicely, even in the microwave! The cashews and cranberries take it to the next level. This isn't your average microwave meal. Portion size was great the first time I ordered, but seemed smaller the next two times. I love that they give you enough sauce that you have some left over ;)

Very flavorful, spicy, but not too spicy. The rice was tasty, too! Would order again!

Perfect fast meal during the week. The rice and chicken were a bit too mixed together in the package so if you wanted to eat separately, that isn't an option.

A little more spicy than anticipated. Compensated with plain yogurt. Wasn't expecting a meal without any prep.

This was actually pretty good, but it would be helpful if there was some way to increase the fiber content just a bit. And maybe kick the spice level up just a tiny bit more.
