Adjust racks to middle and top positions and preheat oven to 350 degrees.
. Wash and dry produce. Cut broccoli florets into bite-size pieces.
Toss on a baking sheet with a drizzle of oil, salt, and pepper.
Roast on middle rack, tossing halfway through, until lightly browned and crisp, 20-25 minutes.
In the last 1-2 minutes of roasting, carefully sprinkle broccoli with Mexican cheese blend. Return to middle rack until cheese has melted.
Meanwhile, place potatoes au gratin 1 inch apart on a parchment-lined baking sheet. Bake on top rack until warmed through, 25-30 minutes. Remove from oven and let cool slightly. Recipe Suggestion: Before roasting, toss broccoli with a drizzle of oil, salt, pepper, and Southwest Spice Blend.
The potatoes were crispy and cheesy and there was plenty of broccoli. Nice pair of sides that would go well with any main dish.
Delish! And so easy, too. Perfect timing on both the potatoes and the broccoli together. Fantastically satisfying as far as lunches go.
