Heat a large drizzle of oil in a small pot over medium heat. Add rice and cook, stirring occasionally, until rice is golden brown and fragrant, 3-4 minutes. Increase heat to high and add 1¼ cup water, half the stock concentrates, and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook, covered, until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
Drain and rinse beans.
When rice is done, in a medium microwave-safe bowl, combine beans and remaining stock concentrates. Cover with plastic wrap and microwave until beans are warmed through, 1-2 minutes.
Fluff rice with a fork and stir in beans. Taste and season with salt if needed. Divide rice and beans between bowls and serve.
Could use more beans. Rice to bean ratio high but with my own spices added it was a great dish
This was the only correct item I got for this delivery (since sorted out with customer service) and it was pretty good. Easy to put together and filling! I added cheese, salsa, and some guacamole to mine when I served it.
Needs fresh onion, garlic and cilantro. Served with the empanadas done in the air fryer and a fresh sliced tomato.
Great addition with the Beef Flautas. Lots of flavor and can definitely stand alone as a tasty side.
This was really good. We used the rest to wrap in tortillas.
I found this menu item, side dish, bland and dry. Needed more flavor & liquid! We added hot sauce to 'pep' it up & add flavor. Thank you!
Wonderful dish. It tastes just like the restaurant variety. We loved it.
A true latino staple. Cannot go wrong with this recipe!!
Not bad! We have a friend who makes us her traditional Puerto Rican rice was hoping for about the same flavors.
The beans to rice ratio was much more in favor of the beans than I expected. Not that much of a bean fan, but it still worked.
