
Making a great sandwich is an art form. Dramatics aside, when you get it right, there’s really nothing better. Luckily, we’ve made nailing it totally effortless. (All you have to do is assemble and dig in.) This one’s got ciabatta bread, pesto, ripe tomatoes, mixed greens, and fresh mozz. There’s also a balsamic-tossed side salad to round things out. Put everything together at the office or be your own best friend and whip it up before you leave for work. When noon rolls around, you’ll be looking at the office fridge with heart eyes.

Ciabatta Roll

• Wash and dry all produce.
• Halve ciabatta rolls. Toast until golden if desired. Thinly slice mozzarella into rounds. Halve tomatoes lengthwise; slice crosswise into half-moons.
• In a medium bowl, toss mixed greens and almonds with vinegar and a large drizzle of olive oil. Season with salt and pepper.
• Spread pesto onto cut sides of ciabatta rolls. Fill with tomatoes, mozzarella, and a bit of salad.
• Halve sandwiches on a diagonal and divide between plates. Toss any remaining tomatoes into remaining salad; serve on the side.
Delicious sandwich lunch with a green salad. The only irregularity was that the recipe called for balsamic vinegar, which was supposed to be included but was missing from the bag of ingredients. I had some on hand, so it worked out fine in the end.
Absolutely delicious. I didn't think I would like the almonds and salad mix on the sandwich with the pesto but it came out really good.
The pesto caprese sandwich is one of our favorites. The pesto flavor is notable and the ciabatta bread is a perfect pairing.
I really like the caprese sandwiches, a good and quick healthy lunch. Your basil pesto sauce is very good, and I used some of the leftover sauce on some pasta.

I added some cranberries to my salad and a balsamic glaze (from trader Joe's) to the sandwich. But it's a caprese sandwich which is always delicious
Great for a hot day- no cooking! Very refreshing, the pesto makes the sandwich.
These sandwiches are terrific. We have a cafe in our building that makes a caprese pannini and this gives it a run for the money. The bread is good, the mozzarella is quality. This is a favorite.
Easy and delicious when I want a light and quick dinner that doesn't heat the house up! I have also had this same sandwich with prosciutto, which was also delicious! I like that the pesto and mayo are not pre-mixed because my tolerance for garlic is low, so I can adjust the amount of pesto I use to my taste...which is why I am getting meals that I have to cook rather than pre-prepared ones!
The pesto was very overpowering and took away from the rest of the sandwich. Fresh Basil would have been a nice addition. The salad was nice
