
Everyone agrees that no one makes meatloaf quite like Mom. But our chefs will settle for the next best thing by taking a page from her cookbook and passing on this recipe. The meal stays as true to tradition as can be: Ground beef mini loaves are brushed with a ketchup glaze, served with roasted broccoli and potatoes, and drizzled with an herby gravy. And if you’d like to claim this recipe as your own, don’t worry—mum’s the word.

Adjust racks to top and middle positions and preheat oven to 425 degrees. Wash and dry produce.
Cut potatoes into ½-inch-thick wedges. Peel and mince garlic. Halve, peel, and mince half the onion (whole onion for 4 servings). Roughly chop parsley. Cut broccoli florets into bite-size pieces if necessary.

Toss potatoes on a baking sheet with a drizzle of oil, salt, and pepper.
Roast on top rack until browned and tender, 20-25 minutes.

Meanwhile, in a large bowl, combine beef*, garlic, panko, half the minced onion, half the parsley, salt (we used ¾ tsp; 1½ tsp for 4 servings), and pepper. Gently combine, then form into two 1-inch-tall loaves (four loaves for 4). Place on one side of a second baking sheet.
Brush tops of meatloaves with half the ketchup (all for 4).

Toss broccoli on opposite side of sheet from meatloaves with a drizzle of oil, salt, and pepper.
Roast on middle rack until broccoli is tender and meatloaves are cooked through, 15-20 minutes. TIP: If broccoli finishes first, remove from sheet and continue roasting meatloaves.

Meanwhile, melt ½ TBSP butter (1 TBSP for 4 servings) in a medium pan over medium heat. Add remaining minced onion; cook, stirring, until softened, 3-4 minutes.
Sprinkle with flour; stir vigorously to combine. Whisk in stock concentrate and ½ cup water (1 cup for 4). Bring to a simmer and cook until thickened and saucy, 3-4 minutes.
Stir in remaining parsley; season with salt and pepper.

Slice meatloaves crosswise.
Divide meatloaves, potato wedges, and broccoli between plates. Spoon gravy over meatloaves and serve.
It asked for 4 cups of flour for a gravy for the meatloaf. That is way off. There is no way. I barely sprinkled some in there and it turned to a ball of dough in the pan. Plus, meatloaf does not need gravy. The meatloaf should have called for an egg in the mix. Very weird recipe.
Meatloaf tasted delicious, though I did add a bit of Worcestershire to it. Potatoes were also good but could've used something else, like a spice.
Love this meal but your nutritional facts are wrong. And there's no way it calls for 4 cups of flour for that gravy. Please fix.
The recipe doesn't make sense. We get meals for 3 servings. This recipe came with 4 bags of flour (2 cups in each bag). There is no way that anyone needs 8 cups of flour for the gravy for even 4 servings - let alone 6 cups of flour for 3 servings. Then the recipe calls for 1 cup of water for 4 servings. In what world do we need 8 cups of flour per 1 cup of water (yes, plus stock concentrate) but that's almost negligible. We modified the recipes and added a TON more water and some more salt & pepper to compensate for the extra water. It just doesn't make sense.
Unfortunately, I had it without gravy. In what universe can one make gravy using 4 cups of flour and only 1/2 cup of liquid??? 4 cups was provided, I do see the menu online indicates 3 cups.....which is still entirely impossible with only 1/2 cup of water. The upside is that I can make a cast out of the resulting goo if I can find someone with a broken arm. Google told me that to make gravy w/ 4 cups flour, I'd need 16 cups of liquid. You might wanna go back to the test kitchen for the gravy portion of this menu.
Large portions. Tasty, fresh whole foods. Lots of veggies to balance out the beef. Had to dock 2 stars though because the instructions for the gravy did not specify HOW MUCH FLOUR TO ADD to the pan so we added all of it (2 cups) and it turns out 2 cups of flour was too much. So we did not get any gravy-just dry flour in a hot pan with a smidge of butter, 1/2 cup water and a drop of beef stock concentrate. (We are not cooks. Cooking is NOT intuitive for us. We will NEVER KNOW how/when/why to adjust a recipe. People like us need to have full, complete, detailed and EXACT instructions.) We are new to Hello Fresh and so far we are really impressed with the quality and quantity of food, but the incomplete instructions seem to happen often and it's only after speaking with a retired chef that I even know what specifics were missing from the instructions.
The recipe was wrong on making the gravy. I was sent 4 cups of flour - which was in the directions!!! WAY too much for the specified amount of water. I had an older recipe card which had the right amount, so the meal turned out OK for me.
Just as good as before but 4 CUPS of flour to make gravy???? Y'all know that's nearly enough for a loaf of bread, right? A couple tablespoons would do. Anyone who doesn't know that had some kind of sludge covering their meatloaf.
Tried to chat with you. Recipe card incorrectly lists 4 cups of flour and indeed there were two full bags of flour in the bag one of which exploded all over. Fortunately we have made this many times and knew it should be 4 tablespoons. Please correct your card for other users.
I received 4 bags of flour. I added one bag & it was way too much flour to make gravy. The meal was still good without the gravy.
