Looking for a sammie with a bit more style? Meet fresh mozzarella and pesto—a well-matched duo and simplest way to turn your lunch totally lavish. This creamy cheese is layered onto pesto-slathered baguettes, and then topped with tender zucchini and fresh sliced tomato. For an even fancier finish, everything’s drizzled with a tangy-sweet balsamic glaze. That’s one snazzy sub!

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

1

• Wash and dry produce. Halve baguettes lengthwise; top cut sides of each baguette with a drizzle of olive oil, salt, and pepper. Toast until golden. TIP: Gently scoop out some bread from cut sides before toasting to make room for the filling.

2

• Trim and slice zucchini crosswise into ¼-inch-thick rounds. Thinly slice mozzarella. Slice tomato into ¼-inch-thick rounds; lightly season with salt and pepper.

3

• Lightly drizzle zucchini with olive oil; season with salt and pepper. Place on a microwave-safe plate; microwave until tender, 3 minutes.

4

• While zucchini cooks, spread pesto onto cut sides of baguettes.

5

• Top bottom halves of baguettes with mozzarella. Top with as much zucchini as you like. (Save any remaining zucchini for another use.) Fan tomato over top and drizzle with balsamic glaze. Close sandwiches and serve.

This was a great and quick lunch. I love the zucchini addition. The balsamic glaze was a perfect consistency.

I'm rather extra so fried zucchini for sure added more crunch to this sandwich. Obviously OBSESSED with how well all flavors complimented one another.

Much improved from the last time I ordered these sammies. The zucchini works better as rounds than as strips, and the tip to carve out some of the bread to make room for fillings was clutch.

Delicious! Microwaving zucchini is a crime though. I sautéed it in the balsamic A+

Not that I liked it least, but I did add a final touch to my husband's and my sandwiches. I pressed them in a grill press to add a little crunch to the bread. That took it over the top, plus a dash of fresh basil would be a great addition.

I could make these sandwiches from grocery store ingredients- but why would I? Perfect amount of everything, easy, and delicious

The most simplest recipe, but by far one of the best, this recipe is one of my top 3. It's fast, refreshing, easy, and delicious.

I enjoyed the fresh ingredients, although our tomato was old when we received it. We didn't notice until opening the bag, so it was disappointing since there were not many ingredients in this sandwich. I wish there was more of a crunch to the sandwich, I think cucumber would've tasted better than zucchini.

Sandwiches are delicious but definitely NOT a filling meal by themselves as they are small. Had to pair them with soup I had in the pantry to get an adequate lunch for myself and my husband, and we are not even big eaters.

I feel this should have had a side like chips or something. For veggie sandwich I was surprised it was just the sandwich. Flavor was fine. I sauteed veg with italian seasoning instead of cooking in microwave.
