
When it comes to quesadillas, we think thereās an endless number of protein, cheese, and veg combos you can make for a delicious and unique meal. This one is no exception: Our chefs pulled together these veg-forward ādillas with protein-packed black beans, sautĆ©ed green pepper, and melty cheese. Theyāre topped with lemon crema and hot sauce for even more oomph. The best part? This all comes together in under 20 minutes.

⢠Wash and dry produce. ⢠Quarter lemon. Core, deseed, and dice green pepper. Drain and rinse beans. ⢠In a small bowl, combine sour cream with a big squeeze of lemon juice to taste. Stir in water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt and pepper.

⢠Melt 1 TBSP butter in a large pan over medium-high heat. Add green pepper and cook, stirring occasionally, until softened, 3-4 minutes. ⢠Add beans and Tex-Mex paste; season with salt and pepper. Cook until beans are warmed through, 2-3 minutes. ⢠Turn off heat; transfer to a medium bowl. Wash out pan.

⢠Place tortillas on a clean work surface; evenly top one half of each tortilla with Mexican cheese blend. Top with filling, then sprinkle with Monterey Jack. Fold tortillas in half to create quesadillas.

⢠Melt 1 TBSP butter in pan used for filling over medium-high heat. (For 4 servings, you may need to work in batches, using 1 TBSP butter for each batch.) Add quesadillas; cook until tortillas are golden brown and cheese melts, 2-4 minutes per side. ⢠Cut quesadillas into thirds and divide between plates. Drizzle with lemon crema and hot sauce to taste. Serve.
I really enjoyed these quesadillas. The black bean filling is SO much better than the usual mushroom filling found in vegetarian dishes. The pepper was too hot for me, but green bell pepper would be good or maybe a Serrano pepper. The tex mex spice was perfect. The lime crema was a delicious touch.
I was shocked at how good this tasted... we added diced chicken to this. I really didn't think my family would like the black beans. The tex mex paste, green peppers were a great balance to the beans in this recipe, and especially the lime crema. My teenage boys said to make this again!
Tasted good, but very messy to make and hard to flip the quesadillas once it is in the pan. The black beans spilled out and then stuck to outside of tortilla and pan. Looked a mess when serving but the whole family enjoyed eating them.
This one got a little spicy, the recipe said green pepper but it definitely kicked harder and was not a usual green pepper shape. Possibly more of a Chile (I may have touched my face and it even burned a bit after washing my hands). We enjoyed the ease of quesadilla night though. We even left off the hot sauce, because the kids are not pro-spicy.
While similar in ingredients and flavors as the black bean tacos, this still managed enough originality and flavor to make it most enjoyable. Having a vegetarian option with quesadillas is a blessing, and we've now had TWO great quesadilla options! BONUS!!
The quesadillas were very good. I have never had black bean and pepper quesadillas, but I would definitely order this one again.
Loved it. Made the two quesadillas then used leftovers with chips. Will say I was shocked with the lemon sauce, didn't think it would fit but I mixed hot sauce in it and that was perfect.
We thoroughly enjoyed this recipe! The spices were lovely. We did feel like there were a bit too many many beans in each quesadilla, but it was enjoyable nonetheless!
Simple, flavorful, fantastic. I added chopped onions and one Roma tomato to the peppers/beans to put this quesadilla over the top.
It's hard to make a quesadilla badly, and this one was no exception. The quesadilla was delicious. I will say with most of these recipes I wish there was more cheese. But I would order again. They toasted up nicely and I used the same pan for everything which made clean up a breeze.
