A good chili has well-seasoned meat, creamy beans, and tender veggies. A great chili, however, has all that and comes together in one pot in under an hour. This chili is one of the greats. And once you take a bite, we can guarantee you’ll agree. Not to mention, these top-notch pork-ified bowls are adorned with some delicious fixings: smoky red pepper crema and sliced jalepeño. If you’ve got some on hand, why not sprinkle some crumbled tortilla chips on top for crunch?

Wash and dry produce.
Trim and thinly slice scallions, separating whites from greens. Thinly slice half the jalapeño into rounds; mince remaining. (TIP: Remove ribs and seeds for less heat.) Dice tomato.

Heat a large drizzle of oil in a large pot over medium-high heat. Add scallion whites and as much minced jalapeño as desired. Season with salt. Cook, stirring, until softened, 5-7 minutes.
Add pork* and Southwest Spice Blend to pot with aromatics; season with salt and pepper. Cook, breaking up meat into pieces, until pork is browned and cooked through, 4-6 minutes.

Stir diced tomato and Tex-Mex paste into pot; cook until slightly darkened in color, 1-2 minutes.
Add beans and their liquid, crushed tomatoes, stock concentrates, ¼ cup water (½ cup for 4 servings), salt, and pepper; stir to combine. Bring to a simmer and cook until thickened, 8-10 minutes. Turn off heat. (TIP: If chili is too thick, add another splash of water.) Taste and season with salt and pepper.
Divide chili between bowls. Top with smoky red pepper crema, scallion greens, and as much sliced jalapeño as you like. Serve.
This was quite good for a quick chili that didn't take 3+ hours to slow cook. Was odd to me that there was no onions in this recipe so I added quarter of an onion, more tomato, green chilies and extra broth (recipe calls for chicken stock concentrate and water, I added 1/2 cup of beef stock in addition)
This chili is very delicious and so easy to make with very little clean up! We will order this kit again!
This is a great recipe. I think it would be great if we could change out the protein/meat option. I add a habanero pepper to this and it's really good!
I'm a big pan of "one-pot" recipes! The extra large protein (15 oz!) was much appreciated. Very satisfying and filling recipe!
Good chili especially for how quickly it all comes together. When i make my chili it's a half day event but this meal was finished cooking fast and it was tasty, none of it went to waste.
This is probably the best meal we have ever had from HelloFresh! We added crushed tortilla chips to our bowls and grated cheddar cheese on top.
Wouldn't have minded more spice/heat but this was tasty & at a spice level I could share with my spouse which is often a challenge. :)
It was really good, but the pork was a little oily. I usually do ground turkey so that's what I'm used to. Definitely liked it more than I thought we would.
Smashingly delicious, fresh. So many parts to it! I added instant rice to sop up the gravy. Lime missing so I used a Real Lime squirt.
Excellent and super easy and quick to prepare- I had extra shredded cheddar cheese to put on.on top which rounded out the spiciness nicely
