Adjust rack to middle position and preheat oven to 450 degrees. Wash and dry produce.
Dice sweet potatoes into 1/2-inch pieces. Core and dice bell pepper into 1/2-inch pieces. Halve, peel, and dice onion into 1/2-inch pieces.
Toss sweet potato, onion, and pepper in sheet tray with a drizzle of oil, salt, and pepper. Roast on middle rack until golden brown and tender, 20-25 minutes.
Remove from oven and drizzle on as much chimichurri as you would like. Serve.
