Cooking Steps

Cook Chicken
1
  • Open package of chicken* and drain off any excess liquid.

  • Heat a drizzle of oil in a large pan over medium-high heat. Add chicken; season with salt and pepper. Cook, stirring occasionally, until browned and cooked through, 4-6 minutes.

  • Turn off heat. Transfer chicken to a large bowl; set aside to cool slightly. Wipe out pan.

Toast Panko
2
  • Melt 1 TBSP butter (2 TBSP for 4 servings) in pan used for chicken over medium heat. Add panko; season with salt and pepper. Cook, stirring constantly, until golden brown, 2-4 minutes.

Prep & Toss Salad
3
  • Wash and dry produce.

  • Halve tomatoes. Trim and discard root end from lettuce. Reserve 6 large leaves for serving (12 leaves for 4 servings); thinly slice remaining lettuce.

  • To bowl with chicken, add tomatoes, shredded lettuce, pesto, and mayonnaise; stir until thoroughly combined. Taste and season with salt and pepper if desired.

Serve
4
  • Divide reserved lettuce leaves between plates; fill with pesto chicken salad. Top with toasted panko and serve.

Review summary

Updated on Sep 2026
  • Flavor: The pesto chicken salad is fresh, light, and flavorful, with the toasted panko adding a satisfying crunch that customers consistently loved.
  • Ease of prep: Quick and simple to put together — most customers had it on the table in about 20 minutes with minimal cleanup.
  • Suggestions: Add sliced green onions, a squeeze of lemon, or a dash of hot sauce to deepen the flavor; some felt the pesto-mayo ratio was heavy, so start with less dressing and adjust to taste. A few customers also enjoyed swapping the lettuce for pita or a flour tortilla for a more substantial wrap.
  • Portions: Several customers found the meal on the lighter side for a full dinner — consider pairing it with a side of rice, soup, or crusty bread to make it more filling.
  • Lettuce: The lettuce leaves were frequently too small to use as wraps; many customers simply chopped everything together into a salad, which worked just as well and was much easier to eat.
  • Leftovers: Best eaten fresh — the dressed chicken salad doesn't hold up well overnight, so plan to enjoy it all in one sitting or store components separately.

These lettuce wraps are perfect for summer! The recipe was easy and I could make in advance for a late dinner. I was shorted some pesto but had some in my refrigerator to make up for it. Fabulous!

Loved the pesto chicken salad. The panko added an interesting little crunch. Best thing about this dish is that it is perfect for a hot evening. I do love lettuce wraps.

Loved the creamy pesto. Ate it more like a salad than a lettuce wrap. This would be terrific inside a big burrito as well....more of a sandwich option.

This was surprisingly good. I did not expect that.. the pesto and breadcrumbs paired really nicely with the lettuce and the tomato.

This is a very great tasting wrap. I love pesto. And like the rest of my weeks meals this week, very easy to make.

We made this as a salad instead of lettuce wraps and it was phenomenal! Really loved the flavors combined with the salad. Not to mention it was a super healthy meal!

I just made it as a salad instead of lettuce wraps. The mix of pesto and mayo was really good.

Chicken went bad but I had shrimp in the freezer which worked great with the pesto, tomatoes and panko! My husband really enjoyed this one

Hello Fresh didn't provide '6 large leaves' of romaine to make lettuce wraps. So instead I turned it into two small salads. This was more like an appetizer than a full meal. Tasty and very easy to put together. Loved the toasted panko bread crumbs. Was it worth the price though? Not really.

Flavor is amazing. The issues I had was my romaine lettuce leaves were too small and narrow to actually use as a lettuce wraps. Ended up just chopping it all to create a salad of sorts
