• Adjust rack to top position (top and middle positions for 4 servings) and preheat oven to 425 degrees. Wash and dry produce. • Trim and thinly slice scallions, separating whites from greens; mince whites. Peel and mince or grate garlic and ginger. Dice sweet potatoes into ½-inch pieces. Core, deseed, and dice bell pepper into ½-inch pieces. Quarter lime.

• In a large bowl, combine beef*, panko, ponzu, scallion whites, garlic, and ginger. Season with salt (we used ½ tsp; 1 tsp for 4 servings) and pepper. Form mixture into two 1-inch-tall loaves (four loaves for 4). • Line one side of a baking sheet with foil and lightly oil; place loaves on foillined side. (For 4, line whole sheet; spread out loaves across entire sheet.) Fold up a bit of foil to create a barrier in the middle of the sheet. TIP: Don’t have foil on hand? Roast meatloaves and veggies on separate sheets.

• Add sweet potatoes and bell pepper to unlined side of same sheet; toss with a large drizzle of oil, salt, and pepper. (For 4 servings, toss veggies on a second sheet; roast meatloaves on top rack and veggies on middle rack.) • Roast on top rack until meatloaves are browned and veggies are slightly tender, 20 minutes. (The meatloaves and veggies will finish cooking in step 5.)

• Meanwhile, in a small bowl, combine mayonnaise with a squeeze of lime juice to taste and as much Sriracha as you like.

Glaze Meatloaves

• Once meatloaves and veggies have roasted 20 minutes, remove sheet from oven. (For 4 servings, leave veggies roasting.) Carefully brush meatloaves with half the sweet soy glaze (save the rest for serving). • Return to top rack until meatloaves are cooked through, glaze is tacky, and veggies are tender, 3-5 minutes more.

Top meatloaves with remaining sweet soy glaze. Drizzle meatloaves and veggie jumble with spicy lime mayo and sprinkle with scallion greens. Divide between plates and serve.

This one is so good. I'm not a big fan of spicy things so I went light on the sriracha, but the combination of lime, mayo, and sriracha made such a delightful sauce for this dish. I love that it comes together on one sheet pan too!

Love this dish. I cook everything on the same cookie sheet and aluminum foil. The fat that bakes off of the meatloaves adds additional flavor to the jumble. I also add in some diced white potatoes and pineapple tidbits to the jumble. Yummy!

OMG delicious!!! I never made meatloaf before in my life and now I'll want to make it all the time! I also loved the combination of sweet potatoes and red bell peppers. I'm going to be craving this meal all the time.

My loaves looked more like meat balls but they were delicious, I actually mixed the beef in with some of the pork from the chili recipe (and will do the same for the chili). Also there was ponzu sauce but no indication on where to use it in recipe (on recipe card maybe the online recipe did). The veggie medley was the best for me, and the Mayo, Sriracha and lime sauce was killer.

We normally love the meatloaf meals but this week was very different. The meatloaves had a gritty/sandy texture. The sweet potatoes and pepper jumble was very good though. It took almost an hour to cook though. Those potatoes didn't want to soften at all.

This recipe is amazingly good! Two sweet potatoes to one bell pepper made the pepper feel less relevant though, maybe another pepper could be added? Or even one sweet potato removed.

Excellent! Love the jumble! I added a few small sweet orange and yellow peppers and it was even better! Husband still upset that there was not enough meat to satisfy. Too small of serving for him.

We don't like spicy so I didn't add the hot sauce to my mayo and it still tasted fabulous with just the lime. This is probably my fav recipe so far although I've loved them all!
