Cooking Steps

Start Prep
1

• Bring a medium pot of water to a boil. Wash and dry produce. • Peel carrots; halve lengthwise and slice on a diagonal into 1⁄4-inch-thick pieces. Trim and thinly slice scallions, separating whites from greens.

Start Soup
2

• Heat a large drizzle of oil in a large pot over medium-high heat. Add carrots, scallion whites, curry powder, salt, and pepper. Cook, stirring, until slightly softened, 1-2 minutes. • Stir 11⁄2 cups water (3 cups for 4 servings), pho stock concentrates, veggie stock concentrate, chili sauce, and garlic powder into pot with veggies. Bring to a boil, then reduce heat to medium low. Cook, stirring occasionally, until carrots are tender, 2-4 minutes.

Prep
3

• Meanwhile, quarter lime.

Cook Noodles
4

• Once pot of water is boiling, add noodles; cook, stirring occasionally, until al dente, 1-2 minutes. • Drain, then rinse noodles under cold water for 30 seconds.

Finish Soup
5

• Stir spinach, drained noodles, coconut milk, and a big squeeze of lime juice into pot with soup; cook, stirring, until spinach is wilted and soup is simmering, 1-3 minutes. • Taste and season with salt and pepper.

Serve
6

• Divide soup between bowls. Sprinkle with scallion greens and serve with remaining lime wedges on the side.

I was pleasantly surprised! Loved this soup. I had some fresh spinach in the refrigerator that needed to be used and so ended up doubling the amount of spinach. With the added greens I also added a bit more water. Next time I will make a point to make the same changes; the added spinach made a big difference.

I'm really getting into these curry but once again not much soup to it. And I really would like more broth. But this is very, very good. I repeat, very, very good. One thing nice about these recipes is you can withhold things or add things. I had a lot of mushrooms and extra greens. But in this case the two carrots they gave were very slender about the width of my little finger and I'm a woman. So there was almost no carrots in this. That was disappointing.

Great wintry, comfort-foody soup. Very tasty. My husband and I loved the spinach and noodles and the good amount of curry powder in it. In fact, the curry powder made our mouths and stomachs warm! 🤭 We cooked the carrots for twice as long as the recipe instructed, and they came out soft and sweet. Will definitely order this again if it's offered.

Only critique is it's not very spicy for curry- however it deserves 4 stars. I'm from New Mexico and I like just a bit more spice but I loved the dish! Just added a little of my own Thai peppers and some chili oil made locally

One of my favorite soups. Only issue is prep is not knowing when to cook the shrimp with the new way of menus when optional meats are added.

Delish! Although the directions didn't have info about where to add my protein I just used another pan so that I could add it to the soup without overcooking it. Flavor was absolutely delicious! Everything was super easy to prepare as well. Would recommend 10/10!

Amazing! I didn't add the Thai chili sauce and definitely needs the fresh lime squeeze at the end. I did this once it was in a bowl to serve. So good!

This was good, I added shrimp & water chestnuts to mine to make it more substantial. But the broth was yummy and just the right blend of spice, and I appreciated having the spinach along with the carrots! Would definitely eat again.

Very tasty! My preference would be for a little spice, but that was easily remedied with some hot sauce! The noodle-to-broth ratio was a little noodle heavy for me, I will ad a bit more water next time. Particularly yummy with the addition of shrimp.

Delish! I pivoted and boiled the noodles directly in the soup and it was soooo good and cut out a pot.
