In this recipe, pork, pepper, and onion are coated in a sumptuous sweet chili sauce, and peanuts are transformed into the perfect crunchy topping, along with citrusy cilantro. Wash and dry produce.
Halve, core, and thinly slice bell pepper into strips. Halve, peel, and thinly slice onion. Zest and quarter lime. Finely chop cilantro.

In a small pot, combine rice, 1¼ cups water (2¼ cups for 4 servings), and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes.
Keep covered off heat until ready to serve.

While rice cooks, heat a large, preferably nonstick, pan over medium-high heat. Add peanuts, 2 TBSP water, and 1 tsp sugar (2 tsp for 4 servings). Cook, stirring often, until water has evaporated and peanuts are coated and lightly toasted, 3-5 minutes.
Turn off heat; transfer to a small bowl. Wipe out pan.

Heat a large drizzle of oil in same pan over medium-high heat. Add bell pepper and onion; season with salt and pepper. Cook, stirring, until tender and lightly browned, 6-9 minutes.
Transfer veggies to a plate.

Add a drizzle of oil to same pan over medium-high heat. Add pork*; season with salt and pepper. Using a spatula, press into an even layer. Cook, undisturbed, until browned on bottom, 3-4 minutes.
Break up meat into pieces and continue cooking until pork is cooked through, 2-4 minutes.
Stir in veggies, then add soy glaze, chili sauce, and 1 TBSP butter (2 TBSP for 4 servings). Cook, stirring, until mixture is thoroughly coated, 1-2 minutes more.
Swap in beef* for pork.

Fluff rice with a fork; stir in 1 TBSP butter (2 TBSP for 4 servings) and lime zest to taste. Season with salt.
Divide rice between bowls and top with pork mixture, peanuts, and cilantro. Serve with lime wedges on the side.
First of all, we are new to HF and have absolutely LOVED every dish that we have gotten. Every delivery has been right on time, and the instructions are clear and detailed. Hence, I wanted to give feedback on the instructions given for the Sweet Chili Beef Bowls. Unless I missed something, I think a couple steps were omitted. I read the instructions probably 5 times because NOWHERE did I see what to do with the sweet Thai chili sauce and the sweet soy glaze. Nor was there a step indicating to combine the veggies with the ground beef. The picture is what tipped me off to combine them, and then I just assumed that was when I should add both of the sauces. Again -- my feedback is for improvement to the instructions only. WE LOVE THE DISH!!
I had so much doubt that I could do the candied nuts properly, but they were so easy to make and came out perfectly. There's a step missing from the printed and app instructions -- no instructions for draining the beef after cooking, adding the sauces and veggies to the beef, or for how long the mix should then be cooked. Taste is wonderful. Really enjoyed the flavor.
One of our favorite meals. We love the rice bowls. The beef had such a great flavor and taste. We really liked the sweet chili flavoring. The peanuts are a nice added surprise.
This recipe is in my top 10. The first time I made it (over a year ago), we were all shocked. My brother commented that what he loves about HF is that you add ingredients that we would have never thought about adding. The candied peanuts put this dish over the top!
The flavor is awesome! The candied peanuts were easier than I thought to make and was a brilliant addition to this recipe.
This was one of my husbands favorites. The sweet sauce on the veggies and beef wasn't too sweet and the cilantro and lime gave it a delicious balance. The candied peanuts...🥰
Delicious. The recipe card lacks direction on how or when to use the Sweet Thai Chili Sauce and how or when to use the Sweet Soy Glaze. It is a glaring omission. Because both of those things added great flavor!
While the food is good there is an issue with the instructions. The recipe card and the instructions online have a step missing regarding the soy sauce and the sweet chili sauce. There is no mention of what to do with these two items. I added them to the beef and then mixed in the veggies coating everything with the soy and chili sauce.
I feel like there is a step missing in the directions. There is no mention of using the sweet soy glaze or the sweet Thai chili sauce that was included with the recipe. The picture seems to show that after cooking the meat the veggies should be stirred into the meat mixture. Maybe at that point the sauces should go in? I don't know because it doesn't say.
The meal was good. But the recipe card didn't give any instructions on when and how to use the sweet soy glaze or the sweet chili sauce. So I had to wing it.
