Cooking Steps

Prep & Make Glaze
1

• Wash and dry all produce. • Zest and quarter lime. Core, deseed, and dice bell pepper into ½-inch pieces. Finely chop cilantro. • In a small bowl, combine chili sauce, sweet soy glaze, ¼ cup water, 1 tsp cornstarch (we sent more), ½ tsp sugar, and a squeeze of lime juice to taste. (For 4 servings, use 1⁄3 cup water, 2 tsp cornstarch, and 1 tsp sugar.)

Cook Pork
2

• Heat a large drizzle of oil in a large pan over medium-high heat. Add bell pepper; season with salt and pepper. Cook, stirring, until slightly tender, 3-4 minutes. • Add pork* and cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes. Season with salt and pepper. • Stir in sweet chili glaze; cook, stirring, until pork is coated, 30-60 seconds more.

Cook Rice
3

• Meanwhile, gently massage rice in package to break up grains. Partially open package; place 1 TBSP butter inside. (For 4 servings, use 1 TBSP butter per package.) Microwave according to package instructions, 90 seconds. • Carefully open package fully; season rice with salt and pepper. Transfer to a medium bowl and add half the cilantro and lime zest to taste. Fluff with a fork.

Serve
4

• Divide rice between bowls and top with pork and pepper mixture and remaining cilantro. Serve with any remaining lime wedges on the side.

Delish! We turned this into Saturday brunch. Layered rice, pork mix, cilantro then eggs scrambled in Persian lime EVOO and topped with the fresh lime zest. YUM! Hello Fresh and me for the brunch win!

I loved how quick this recipe was, but the lemongrass flavor of the rice was quite strong. I also wished there were more fresh elements to this (i.e., fresh tomatoes garnished on top).

Needs an onion to accompany the pepper. Also, I added some crispy fried onions at the end on top, which also made it better. Otherwise, the taste of the sauce mixture is perfect and this would easily be a 5-star bowl.

I loved the rice. It was flavorful and easy to prepare. This is a nice quick meal. The flavor profiles are just too similar to many of your other Asian inspired bowls. I'd like to see something different.

It was very simple to me. I felt like there was much more pork than rice and peppers so it kind of felt like I was just eating meat. But it was still good and simple to make

This is one of our favorites. Would love a recipe for how to make the rice fresh rather than microwave. Microwave rice tastes ok but the texture is chewy.

Needs more rice. I personally would cut or eliminate the 1/2 tsp sugar, & add a veggie (maybe bok choy). But v good overall.
